Blue Rathgore was a blue Irish cheese made from goat's milk. It was produced from 1989 until at least 2000 by the Woodside Dairy in Finaghy, Belfast, Northern Ireland. [1]

Blue Rathgore cheese had a spicy flavour with a crumbly and moist texture.

The creamery draws its milk supplies mostly from over 60 dairy farmers from across Northern Ireland. The company was founded in 1898 and added cheese production in 1972. Fivemiletown Creamery is the only speciality cheese maker in Northern Ireland. In 2014 Fivemiletown Creamery was acquired by Dale Farm.

Abbey Cheese is an Irish cheese manufacturer, making cows'-milk and goats'-milk cheeses in Portlaoise, in the Midlands of Ireland.

Ardagh Castle is an Irish cheese producer owned by Gwynfor Owen and Christine Owen. It is located on their farm at Baltimore, County Cork. Founded by Judy Wotton, the current owners acquired Ardagh Castle in 2014 and have continued to make cheese in the same way. Three types of cheese are made. All are farmhouse cheeses, handmade using raw milk sourced from their small herd of Anglo-Nubian goats. Production of the cheese is very small and it is sold at Skibbereen farmers market.

Ardsallagh Goat Farm is located at Carrigtwohill County Cork. Three types of cheese are made from their own herd and from locally sourced goat's milk. The cheeses are suitable for vegetarians.

Brined cheese Cheese that is matured in brine

Brined cheese, also sometimes referred to as pickled cheese for some varieties, is cheese that is matured in brine in an airtight or semi-permeable container. This process gives the cheese good stability, inhibiting bacterial growth even in warmer climates. Brined cheeses may be soft or hard, varying in moisture content, and in colour and flavour, according to the type of milk used; though all will be rindless, and generally taste clean, salty and acidic when fresh, developing some piquancy when aged, and most will be white.
