A chief cook (often shortened to cook) is a seniormost unlicensed crewmember working in the steward's department of a merchant ship. The chief cook's principal role is to ensure the preparation and serving of meals that are both delicious and nutritious.
In addition to directing and participating in the preparation and serving of meals, the chief cook determines timing and sequence of operations required to meet serving times; inspects galley and equipment for cleanliness; and oversees proper storage and preparation of food. The cook may plan or assist in planning meals and taking inventory of stores and equipment.
A chief cook's duties may overlap with those of the steward's assistant, the chief steward, and other steward's department crewmembers. [1]
In the United States Merchant Marine, in order to be occupied as a chief cook a person has to have a Merchant Mariner's Document issued by the United States Coast Guard. Because of international conventions and agreements, all chief cooks who sail internationally are similarly documented by their respective countries.

The United States Merchant Marine is an organization composed of United States civilian mariners and U.S. civilian and federally owned merchant vessels. Both the civilian mariners and the merchant vessels are managed by a combination of the government and private sectors, and engage in commerce or transportation of goods and services in and out of the navigable waters of the United States. The Merchant Marine primarily transports domestic and international cargo and passengers during peacetime, and operate and maintain deep-sea merchant ships, tugboats, towboats, ferries, dredges, excursion vessels, charter boats and other waterborne craft on the oceans, the Great Lakes, rivers, canals, harbors, and other waterways. In times of war, the Merchant Marine can be an auxiliary to the United States Navy, and can be called upon to deliver military personnel and materiel for the military.
The United States Maritime Administration (MARAD) is an agency of the United States Department of Transportation. MARAD administers financial programs to develop, promote, and operate the U.S. Maritime Service and the U.S. Merchant Marine. In addition, it conducts research and development activities in the maritime field; regulates the transfer of U.S. documented vessels to foreign registries; maintains equipment, shipyard facilities, and reserve fleets of Government-owned ships essential for national defense.
Its programs promote the use of waterborne transportation and its seamless integration with other segments of the transportation system, and the viability of the U.S. merchant marine. The Maritime Administration works in many areas involving ships and shipping, shipbuilding, port operations, vessel operations, national security, environment, and safety. The Maritime Administration is also charged with maintaining the health of the merchant marine, since commercial mariners, vessels, and intermodal facilities are vital for supporting national security, and so the agency provides support and information for current mariners, extensive support for educating future mariners, and programs to educate America's young people about the vital role the maritime industry plays in the lives of all Americans.
A second mate or second officer (2/O) is a licensed member of the deck department of a merchant ship holding a Second Mates Certificate of Competence, by an authorised governing state of the International Maritime Organization (IMO). The second mate is the third in command and a watchkeeping officer, customarily the ship's navigator. Other duties vary, but the second mate is often the medical officer and in charge of maintaining distress signaling equipment. On oil tankers, the second mate usually assists the chief mate with the cargo operations.
A third mate (3/M) or third officer is a licensed member of the deck department of a merchant ship. The third mate is a watchstander and customarily the ship's safety officer and fourth-in-command. The position is junior to a second mate. Other duties vary depending on the type of ship, its crewing, and other factors.
Under the Seafarers' Identity Documents Convention, 1958, countries with a merchant navy (also called a merchant marine) require identifying credentials for their mariners. The Merchant Mariner's Document (MMD) or Z-card in the United States, and the Ordinary Seaman's Certificate in the United Kingdom are examples of these credentials.
Seafaring is a tradition that encompasses a variety of professions and ranks. Each of these roles carries unique responsibilities that are integral to the successful operation of a seafaring vessel. A ship's crew can generally be divided into four main categories: the deck department, the engineering department, the steward's department, and other. The reasoning behind this is that a ship's bridge, filled with sophisticated navigational equipment, requires skills differing from those used on deck operations – such as berthing, cargo and/or military devices – which in turn requires skills different from those used in a ship's engine room and propulsion, and so on.
The United States Maritime Service (USMS) was established in 1938 under the provisions of the Merchant Marine Act of 1936 as voluntary training organization to train individuals to become officers and crewmembers on merchant ships that form the United States Merchant Marine per 46 U.S.C. § 51701. Heavily utilized during World War II, the USMS was largely dissolved in 1954, and its resources were absorbed into other federal departments. However, while the service is no longer structurally organized, remnants of the service still exist today and the service still actively commissions officers to function as administrators and instructors at the United States Merchant Marine Academy and the state maritime academies.

A chief engineer, commonly referred to as "Chief" or "ChEng", is the most senior licensed mariner of an engine department on a ship, typically a merchant ship, and holds overall leadership and the responsibility of that department. In rank, a chief engineer is equivalent to the rank of a ship's captain. As a person who holds one of the most senior roles on the ship, they must have excellent communication and leadership skills. They will be expected to regularly work alongside other crew members and external consultants, and most importantly, provide guidance to their team.
An oiler is a worker whose main job is to oil machinery. In previous eras there were oiler positions in various industries, including maritime work, railroading, steelmaking, and mining. Today most such positions have been eliminated through technological change; lubrication tends to require less human intervention, so that workers seldom have oiling as a principal duty. In the days of ubiquitous plain bearings, oiling was often a job description in and of itself.
A wiper is a position responsible for both cleaning the engine spaces and machinery of a ship and assisting the ship's engineers as directed. Railroad workers who performed similar jobs were also known as wipers, or in the UK as "cleaners".
Culinary Specialist is a United States Navy and United States Coast Guard occupational rating. The Navy rating was created on January 15, 2004 from the Mess Management Specialist (MS) rating.
A motorman, also known as a qualified member of the engineering department (QMED), is the seniormost rate in the engine room of a ship. The motorman performs a variety of tasks connected with the maintenance and repair of engine room, fireroom, machine shop, ice-machine room, and steering-engine room equipment. The motorman inspects equipment such as pumps, turbines, distilling plants, and condensers, and prepares record of condition. The motorman lubricates and maintains machinery and equipment such as generators, steering systems, lifeboats, and sewage disposal systems, and also cleans and restores tools and equipment.
A steward's assistant (SA) is an unlicensed, entry-level crewmember in the Steward's department of a merchant ship. This position can also be referred to as steward, galley utilityman, messman, supply, waiter or General Steward (GS).
A chief steward is the senior crew member working in the steward's department of a ship. Since there is no purser on most ships in the United States Merchant Marine, the steward is the senior person in the department, whence its name. In the British Merchant Navy, a steward is a junior member of the department, and so the term "chief steward" is always used for the senior member.
An ordinary seaman (OS) is a member of the deck department of a ship. The position is an apprenticeship to become an able seaman, and has been for centuries. In modern times, an OS is required to work on a ship for a specific amount of time, gaining what is referred to as "sea time". For centuries, the term ordinary seaman was used to refer to a seaman with between one and two years' experience at sea, who showed enough seamanship to be so rated by their captain. Historically, in some navies and the merchant marine, a sailor with less experience was called a landsman.
A pumpman is an unlicensed member of the Deck Department of a merchant ship. Pumpmen are found almost exclusively on tankers, and on oil tankers in particular. Variations on the title can include chief pumpman, QMED/pumpman, and second pumpman.

Nautical operations refers to the crew operation of a ship. It is the term used in academic education to refer to the studies of this professional field. Nautical operations refers to all the operational procedures, specific roles of officers and crew members, and regular functions and technical processes, which together shape the structure and functions for the general operations of a ship.
