David Schomer is a co-founder of Espresso Vivace. [3] [4] The Seattle Times said "Schomer is as influential in the gourmet coffee world as Starbucks CEO Howard Schultz is in the mainstream coffee industry."
Schomer joined the United States Air Force in 1974. Schomer received a BFA in classical flute performance from Cornish College of the Arts in Seattle. [5]
Schomer became known within the coffee industry for his innovations, such as how he customizes his grinders and espresso machines with PID controllers to achieve a more constant water temperature. [6] His methods have influenced latte making at Portland's Stumptown Coffee Roasters, New York's Ninth Street Espresso, and Chicago's Intelligentsia Coffee & Tea. Ninth Street's Kenneth Nye said Schomer's work developing his techniques, "was light-years ahead of the conversation at the time". Schomer thought that when he opened Vivace in 1988, he had "missed the peak" of the espresso explosion, when in fact his scientific exploration of extraction methods was not happening elsewhere.
Besides training hundreds of baristas who went on to influence coffee shops across the country, Schomer self published a book on espresso techniques in 1994, while also writing columns for Café Ole magazine in the 1990s. [2] Mark Pendergrast said that Schomer inherited the title of "world's most passionate espresso engineer" upon the death of Italian food chemist Ernesto Illy in 2008. [7] Schomer's 1996 Espresso Coffee: Professional Techniques has been described as "the industry bible". [8]
Schomer credits Espresso Vivace's survival in a competitive market to his own "absolute fidelity" to the goal of "making a better cup", together with the sound fiscal and operations management of his business partner and former spouse, Geneva Sullivan. [3] [9] Espresso Vivaces's first incarnation was a coffee cart, at 5th and Union, serving mainly financial industry workers, whom Schomer says did not consistently frequent the same cafes or pay close attention to quality. [9]

Gerald Baldwin is an American businessman. He and two other entrepreneurs, Gordon Bowker and Zev Siegl, founded Starbucks in Seattle, in 1971. He is a Sonoma Valley vintner, and co-founder of J. Baldwin Wines.
Alfred H. Peet was a Dutch-American entrepreneur and the founder of Peet's Coffee & Tea in Berkeley, California, in 1966. Peet is widely credited with starting the specialty coffee revolution in the US. Among coffee historians, Peet has been called "the Dutchman who taught America how to drink coffee." Peet taught his style of roasting beans to Jerry Baldwin, Zev Siegl and Gordon Bowker, who, with his blessing, took the technique to Seattle and founded Starbucks in 1971. Peet later distanced himself, however, from the Starbucks trio as they experimented with ultra-dark roasts. "Baldwin never learned anything from me," Peet was later quoted as saying.

Latte art is a method of preparing coffee created by pouring microfoam into a shot of espresso and resulting in a pattern or design on the surface of the latte. It can also be created or embellished by simply "drawing" in the top layer of foam. Latte art is particularly difficult to create consistently, due to the demanding conditions required of both the espresso shot and milk. This, in turn, is limited by the experience of the barista and quality of the espresso machine. The term also applies to other beverages containing milk foam, such as cappuccino and hot chocolate.

It is notable for being one of the city's first espresso shops and for its role in the history of Starbucks, as the place where founding proprietor Dave Olsen designed the Starbucks coffee product line. Situated in an alleyway, the cafe features multiple entrances and rooms.

The U.S. market has, since the early 2010s, been primarily contested by its two largest players, Starbucks and Dunkin'. Since 2020, competition over the Chinese coffee market has intensified between Starbucks and Luckin Coffee.
Starbucks Reserve is a program by the international coffeehouse chain Starbucks. The program involves operation of worldwide roasteries; currently seven are in operation. Also part of the program are 28 coffee bars preparing Starbucks Reserve products, what Starbucks considers its rarest and best-quality coffees, usually single-origin coffees. Some Starbucks Reserve coffee is also sold in about 1,500 of the chain's traditional outlets.
Spella Caffè is a coffee shop in Portland, Oregon, United States. Andrea Spella started the business as a cart in 2006, before opening a brick and mortar space in downtown Portland in 2010. The business has garnered a positive reception, and has been cited as an influence for other coffee company founders.
Ghost Alley Espresso is a coffee shop located at Pike Place Market in Seattle, Washington, United States. The business operates in a former service room for bathroom attendants on Post Alley, close to the Gum Wall. The current owner Michael Buchwald purchased the business from Mercedes Carrabba, who used the shop as a starting location for ghost tours. The space is supposedly haunted by the ghost of Arthur Goodwin, a former manager of Pike Place Market.
