Hungary water (sometimes called "the Queen of Hungary's Water", [1] Eau de la Reine de Hongary, [2] or "spirits of rosemary" [2] ) was one of the first alcohol-based perfumes in Europe, primarily made with rosemary. [2] The oldest surviving recipes call for distilling fresh rosemary and thyme [3] with brandy, [4] while later formulations contain wine, [5] [6] lavender, [5] [6] mint, sage, [3] marjoram, [4] costus, orange blossom and lemon.
The exact date of the invention of Hungary water is lost to history, though some sources say it dates to 1370 [7] [8] or the late 14th century. [2] It is equally unclear who in particular created it. According to legend, it was formulated at the command of the Queen Elizabeth of Hungary, [7] sometimes identified as Queen Isabella of Hungary[ citation needed ] [note 1] or in one document[ specify ] "Saint Elisabeth, Queen of Hungary". [note 2] Some sources say that a hermit or monk-recluse first gave it to the Queen of Hungary, [8] though most likely it was made by a court alchemist or a monk-alchemist.[ citation needed ] The water was given to the queen in order to help her headaches. [9] These legends mostly date to the early to mid-17th century,[ citation needed ] so the details may have become confused in the intervening centuries.
The queen in question is frequently assumed[ by whom? ] to be Elisabeth of Poland (1305–1380), although the particulars of her life do not match those in the more common legends. It is even more unlikely that it could be Saint Elisabeth of Hungary (1207–1231), who is additionally too early and not a queen. [note 3] The only plausible Queen Isabella (late 13th century)[ citation needed ] likewise seems to be too early to be a strong candidate, as the invention of this water is most probably related[ why? ] to the Black Death epidemic that ravaged Europe between 1346 and 1350 caused by a bacterial infection. [10] This could potentially be due to the antibacterial effects found in the wine or brandy and rosemary that was used to make the water. [11] [12]
According to legends, Hungary water first appeared outside of Hungary in 1370 when Charles V of France, who was famous for his love of fragrances, received some.[ citation needed ] Its use was popular across Europe for many centuries, and until Eau de Cologne appeared in the 18th century, it was the most popular fragrance and remedy applied.[ citation needed ]
By the 18th century, French Hungary water from Montpellier [13] was being touted over other variations of Hungary water, because of the quality of the rosemary used in the distillation. [6] Advertisements in newspapers even warned against counterfeit versions of French Hungary water, explaining to potential buyers how to detect the difference in quality. [14]
Hungary water was used during the late 17th century as a form of medicine. It was believed to have many uses such as helping to relieve a headache, toothache, or ringing ears. It was also used to help cleanse the body by clearing out several of the vital organs of impurities. Some even believed that it helped reduce blindness and the inability to hear. It was one of the medicines at the time that could be considered a "cure all" meaning that it would help with almost every ailment a person could face. [9]
Hungary water was made through a distillation process that included concentrating the ingredients involved, which often included rosemary and wine. [15] It was used for men, women, and children alike. The dosage was one or two sips of the medicine or a topical application, depending on whether the ailment was internal or external. [15]
Similar to other herb- and flower-based products, Hungary water was also a valuable remedy, with recipes advising the user to wash with it [5] or drink it in order to receive the most benefit. [4] Other times, it was recommended to be added to other prepared distilled waters to use when washing one's face in order to help prevent irritation and breakouts. [15] It was even thought to help people maintain youthful appearance and beauty. [2] [8]
Lemon balm is a perennial herbaceous plant in the mint family and native to south-central Europe, the Mediterranean Basin, Iran, and Central Asia, but now naturalised elsewhere.
Salvia rosmarinus, commonly known as rosemary, is a shrub with fragrant, evergreen, needle-like leaves and white, pink, purple, or blue flowers. It is native to the Mediterranean region, as well as Portugal and northwestern Spain. Until 2017, it was known by the scientific name Rosmarinus officinalis, now a synonym.
Brandy is a liquor produced by distilling wine. Brandy generally contains 35–60% alcohol by volume and is typically consumed as an after-dinner digestif. Some brandies are aged in wooden casks. Others are coloured with caramel colouring to imitate the effect of aging, and some are produced using a combination of aging and colouring. Varieties of wine brandy can be found across the winemaking world. Among the most renowned are Cognac and Armagnac from south-western France.

Rose water is a flavoured water made by steeping rose petals in water. It is the hydrosol portion of the distillate of rose petals, a by-product of the production of rose oil for use in perfume. Rose water is also used to flavour food, as a component in some cosmetic and medical preparations, and for religious purposes throughout Eurasia.
Eau de Cologne or simply cologne is a perfume originating from Cologne, Germany. Originally mixed by Johann Maria Farina in 1709, it has since come to be a generic term for scented formulations in typical concentration of 2–5% and also more depending upon its type of essential oils or a blend of extracts, alcohol, and water. In a base of dilute ethanol (70–90%), eau de cologne contains a mixture of citrus oils, including oils of lemon, orange, tangerine, clementine, bergamot, lime, grapefruit, blood orange, bitter orange, and neroli. It can also contain oils of lavender, rosemary, thyme, oregano, petitgrain, jasmine, olive, oleaster, and tobacco.
Perfume is a mixture of fragrant essential oils or aroma compounds (fragrances), fixatives and solvents, usually in liquid form, used to give the human body, animals, food, objects, and living-spaces an agreeable scent. Perfumes can be defined as substances that emit and diffuse a pleasant and fragrant odor. They consist of manmade mixtures of aromatic chemicals and essential oils. The 1939 Nobel Laureate for Chemistry, Leopold Ružička stated in 1945 that "right from the earliest days of scientific chemistry up to the present time, perfumes have substantially contributed to the development of organic chemistry as regards methods, systematic classification, and theory."

Moonshine is high-proof liquor, traditionally made or distributed illegally. Its clandestine distribution is known as bootlegging. The name was derived from a tradition of distilling the alcohol at night to avoid detection. In the first decades of the 21st century, commercial distilleries have adopted the term for its outlaw cachet and begun producing their own legal "moonshine", including many novelty flavored varieties, that are said to continue the tradition by using a similar method and/or locale of production.

Liquor or distilled beverage is an alcoholic drink produced by the distillation of grains, fruits, vegetables, or sugar that have already gone through alcoholic fermentation. Other terms for liquor include spirit, spirituous liquor or hard liquor. The distillation process concentrates the liquid to increase its alcohol by volume. Pálinka is a traditional fruit spirit with origins in the medieval Hungary, known under several names. Protected as a geographical indication of the European Union, only fruit spirits mashed, distilled, matured and bottled in Hungary and similar apricot spirits from four provinces of Austria can be called "pálinka", while "Tótpálinka" refers to wheat-derived beverages. Törkölypálinka, a different product in the legal sense, is a similarly protected pomace spirit that is commonly included with pálinka. While pálinka may be made of any locally grown fruit, the most common ones are plums, apricots, apples, pears, and cherries.
An eau de vie is a clear, colourless fruit brandy that is produced by means of fermentation and double distillation. The fruit flavor is typically very light.
Rose oil is the essential oil extracted from the petals of various types of rose. Rose ottos are extracted through steam distillation, while rose absolutes are obtained through solvent extraction, the absolute being used more commonly in perfumery. The production technique originated in Greater Iran. Even with their high price and the advent of organic synthesis, rose oils are still perhaps the most widely used essential oil in perfumery.
Neroli oil is an essential oil produced from the blossom of the bitter orange tree. Its scent is sweet, honeyed and somewhat metallic with green and spicy facets. Orange blossom is also extracted from the same blossom and both extracts are extensively used in perfumery. Orange blossom can be described as smelling sweeter, warmer and more floral than neroli. The difference between how neroli and orange blossom smell and why they are referred to with different names, is a result of the process of extraction that is used to obtain the oil from the blooms. Neroli is extracted by steam distillation and orange blossom is extracted via a process of enfleurage or solvent extraction.
The still room is a room for preparing household compounds, found in most great houses, castles or large establishments throughout Europe, dating back at least to medieval times. Stillrooms were used to make products as varied as candles, furniture polish, and soap; distillery was only one of the tasks carried out there.
The word perfume is used today to describe scented mixtures and is derived from the Latin word per fumus. The word perfumery refers to the art of making perfumes. Perfume was refined by the Romans, the Persians and the Arabs. Although perfume and perfumery also existed in East Asia, much of its fragrances were incense based. The basic ingredients and methods of making perfumes are described by Pliny the Elder in his Naturalis Historia.
Eau de toilette is a lightly scented perfume. It is also referred to as aromatic waters and has a high alcohol content. It is usually applied directly to the skin after bathing or shaving. It is traditionally composed of alcohol and various volatile oils. Traditionally these products were named after a principal ingredient; some being geranium water, lavender water, lilac water, violet water, spirit of myrcia and 'eau de Bretfeld'. Because of this, eau de toilette was sometimes referred to as "toilet water".
Attar, also known as ittar, is an essential oil derived from botanical or other natural sources. Most commonly these oils are extracted via hydrodistillation or steam distillation. The Persian physician Ibn Sina was the first to derive the attar of flowers from distillation. Attar can also be expressed by chemical means but generally natural perfumes which qualify as attars are distilled with water. The oils are generally distilled into a wood base such as sandalwood and then aged. The aging period can last from one to ten years depending on the botanicals used and the results desired. Technically attars are distillates of flowers, herbs, spices and other natural materials such as baked soil over sandalwood oil/liquid paraffins using hydrodistillation technique involving a still and receiving vessel. These techniques are still in use at Kannauj in India.
