Indonesian Livestock Research Center (Indonesian : Balai Penelitian Ternak) is a research center whose tasks involve the research of poultry, cattle, buffaloes, goats, sheep, etc. It is located in Banjarwaru Street, Ciawi, Bogor Regency, West Java. [1]

<span class="mw-page-title-main">Chymosin</span> Class of enzymes

Chymosin or rennin is a protease found in rennet. It is an aspartic endopeptidase belonging to MEROPS A1 family. It is produced by newborn ruminant animals in the lining of the abomasum to curdle the milk they ingest, allowing a longer residence in the bowels and better absorption. It is widely used in the production of cheese.

<i>Aspergillus niger</i> Species of fungus

Aspergillus niger is a mold classified within the Nigri section of the Aspergillus genus. The Aspergillus genus consists of common molds found throughout the environment within soil and water, on vegetation, in fecal matter, on decomposing matter, and suspended in the air. Species within this genus often grow quickly and can sporulate within a few days of germination. A combination of characteristics unique to A. niger makes the microbe invaluable to the production of many acids, proteins and bioactive compounds. Characteristics including extensive metabolic diversity, high production yield, secretion capability, and the ability to conduct post-translational modifications are responsible for A. niger's robust production of secondary metabolites. A. niger's capability to withstand extremely acidic conditions makes it especially important to the industrial production of citric acid.

Ethanol fermentation, also called alcoholic fermentation, is a biological process which converts sugars such as glucose, fructose, and sucrose into cellular energy, producing ethanol and carbon dioxide as by-products. Because yeasts perform this conversion in the absence of oxygen, alcoholic fermentation is considered an anaerobic process. It also takes place in some species of fish where it provides energy when oxygen is scarce.

<i>Aspergillus sojae</i> Species of fungus

Aspergillus sojae is a species of fungus in the genus Aspergillus.

A sophorolipid is a surface-active glycolipid compound that can be synthesized by a selected number of non-pathogenic yeast species. They are potential bio-surfactants due to their biodegradability and low eco-toxicity.

Metschnikowia pulcherrima is a ubiquitous species of yeast, with numerous strains, belonging to the family Metschnikowiaceae, and found on grapes, cherries, flowers, spoiled fruit and consequently carried by fruit flies. It is a non-Saccharomyces yeast and plays an important role in the vinification of wine when it is present on grapes or winery equipment, and has historically seen use in South Africa’s wine industry. It is also being studied at the University of Bath as a possible alternative to the use of Palm oil, and early results show promise. M. pulcherrima is ovoid to ellipsoidal in shape and reproduces by budding. Its cells are globose and thick-walled, holding a single, large oil droplet of high refractive index. As the result of incomplete budding where cells remain attached after division, pseudohyphae may form under anaerobic conditions.

<i>Aspergillus awamori</i> Species of fungus

Aspergillus awamori is the scientific name for what, until about 2013, was considered a type of black Aspergillus used to make awamori and shōchū. Due to international research in 2013, the black kōji used to make awamori and shōchū is now commonly referred to by the scientific name Aspergillus luchuensis.

<i>Aspergillus tubingensis</i> Species of fungus

Aspergillus tubingensis is a darkly pigmented species of fungus in the genus Aspergillus section Nigri. It is often confused with Aspergillus niger due to their similar morphology and habitat. A. tubingensis is often involved in food spoilage of fruits and wheat, and industrial fermentation. This species is a rare agent of opportunistic infection.

Aspergillus wentii is an asexual, filamentous, endosymbiotic fungus belonging to the mold genus, Aspergillus. It is a common soil fungus with a cosmopolitan distribution, although it is primarily found in subtropical regions. Found on a variety of organic materials, A. wentii is known to colonize corn, cereals, moist grains, peanuts and other ground nut crops. It is also used in the manufacture of biodiesel from lipids and is known for its ability to produce enzymes used in the food industry.

Kōji refers to various molds of the genus Aspergillus sp., which are traditionally used in East Asian cuisine for the fermentation of food. In Japanese, kōji refers to both the Aspergillus starter culture and mixtures of Aspergillus with wheat and soybean meal. It can be fried and eaten directly or processed to a sauce.
