Bryn Williams (born 6 June 1977) is a chef originally from Denbigh, Wales. He is the head chef and sole proprietor of Odette's Restaurant, Primrose Hill, London. [1]
He shot to fame as merely a sous chef in 2006 by beating established and well-known chefs to cook the fish course for the Queen's 80th birthday celebrations on the television programme Great British Menu . [2] He is now widely regarded as one of Wales' best chefs and one of Britain's new crop of "celebrity" chefs. In June 2015 he opened his new bistro, Bryn@Porth Eirias, on the sea shore in the north Wales town of Colwyn Bay.
Bryn Dwyfor Williams was born and raised into a farming family near Denbigh, Wales, with his brothers Gareth and Siôn. [3] [4] His father Eifion, a mechanic, is one of seven children, four of whom became farmers. [3] [5] Gwenda, his mother, is a doctor's receptionist. [5] He received all his education through the medium of Welsh before moving to further education. He attended Ysgol Gynradd Twm o'r Nant, Denbigh (Primary) [5] and Ysgol Uwchradd Glan Clwyd, St Asaph (Secondary). Williams lived in Denbigh until he was 18, then moved to London.[ citation needed ]
Williams's interest in food began as a young child during a primary school visit to a bakery in Denbigh. Seeing the individual ingredients turned into bread sparked an interest in food and its processes that would stay with him. He later worked at the same bakery as a teenager on Saturday mornings. He also developed a respect for food whilst growing vegetables, fishing and shooting for game on his uncle's farm as a youngster.[ citation needed ]
After leaving high school at the age of 16 he attended Coleg Llandrillo Cymru – studying catering. In 2009, Williams was appointed Skills Ambassador for the college. [6]
After leaving college and working in Cafe Nicoise in Colwyn Bay, he was encouraged by head chef Carl Swift to take his skills to London. He was taken on by Marco Pierre White at the Criterion.
After three years learning his craft under Marco Pierre White at the Criterion, he was sous chef under the tutelage of another culinary legend, Michel Roux Jr at Le Gavroche for a further three years. [7] In 2001 he had an opportunity to experience European cuisine at first hand, working at the Patisserie Millet in Paris, which is also where the Roux family honed their skills. In the same year, he went on to work at Hotel Negresco, a two Michelin-starred restaurant in Nice.
Back in Britain, Williams moved to the Michelin-starred Orrery Restaurant on Marylebone High Street in London, working there for four years under the tutelage of head chef André Garrett. Whilst working at the Orrery he competed for the Roux Scholarship, having been encouraged to participate by Garrett who was himself a previous winner of the prestigious award. Williams finished second overall that year. [8]
Following his success on the Great British Menu television series in 2006, Williams was offered the head chef's position at Odette's, a restaurant in Primrose Hill. [9] The restaurant had recently undergone an expensive refurbishment following its purchase by Vince Power, who was looking for the right name to head-up his latest culinary venture.
He bought out the owner and became sole chef-proprietor of Odette's on 1 October 2008. Reviews under Williams have been very good. [10] [11] [12]
It was announced on 9 September 2013 that Bryn Williams was to open a bistro at a multi-million pounds water sports centre on Colwyn Bay promenade. The announcement was made at the official opening of Porth Eirias by First Minister of Wales Carwyn Jones. The bistro opened in June 2015. [13]
Touring Club opened in Penarth, Wales in June 2023. [14]
Williams is the Chef Patron at 'The Cambrian Adelboden' in the Swiss Alps. [15]
Williams was honoured by the Gorsedd of the Bards at the National Eisteddfod of Wales 2013 festival in his home town of Denbigh, by being chosen a new member of the Eisteddford Druidic Order. [16]
In 2006, he was a contestant on BBC Two's Great British Menu , impressing the judges throughout the stages of the competition. Williams interviewed his grandmother about dishes she used to eat as a child before settling on a menu. [17] He beat Angela Hartnett in the regional round, and went on to win the public's vote to cook his fish course of 'Turbot with Oxtail' at Queen Elizabeth's 80th-birthday banquet at Mansion House. He retained his crown when he beat Matt Tebbutt in 2007. He has since become a familiar face on Saturday Kitchen , also making appearances on Something for the Weekend and Market Kitchen .
Williams's first language is Welsh, and he has appeared in several programmes on the Welsh-language television channel, S4C. He was one of three judges on the very popular Welsh-language cooking competition programme Chez / Casa Dudley; the third series started in Autumn 2008.
A six-part series of Cegin Bryn (Bryn's Kitchen) started on S4C in March 2012. [18] The programme is based on his cookbook Bryn's Kitchen and features six key ingredients, cooked in three different ways whilst also tracking their journey from source to plate. The second series of Cegin Bryn quickly followed in January 2013.
Williams cooked live every day in the GMTV kitchen with Myleene Klass during the last week of its 17 years as a breakfast television broadcaster on ITV. GMTV came to an end on 3 September 2010.
On 21 March 2010, Williams appeared on Wales on the Menu on BBC Radio Wales, where food critic Simon Wright challenged the Welsh public to attempt to get their dish on Bryn Williams' top London menu. Williams was impressed enough by 23-year-old student Tom Watts Jones and his complex dish of self-caught Welsh rabbit that he offered him a permanent job as a commis chef. [19]
Williams published his first book, Bryn's Kitchen, in March 2011. His second book, For The Love of Veg, was published in October 2013. His Welsh language cookbook, Tir a Môr, was published in October 2015. [20]
Williams is a Patron of Gwledd Conwy Feast, [21] which is Wales' second-largest food festival with around 25,000 visitors each year.
Cardiff Blues, Wales and British and Irish Lions rugby player Martyn Williams appointed Bryn as one of the 7 Patrons of his Spirit of Wales testimonial year in 2010, to help raise money for vulnerable children and cancer victims. Other Patrons include Ian Woosnam, Ioan Gruffudd and James Dean Bradfield. [22]
He married Sharleen Spiteri, the frontwoman of Scottish band Texas, in September 2018 at the 15th-century church of St. Tyrnog in Llandyrnog, North Wales. [23] The pair have become something of a celebrity couple in their own right. In 2021, they appeared on motoring podcast Fuelling Around to discuss their love of cars as well as their successful careers. [24]
Colwyn Bay is a town, community and seaside resort in Conwy County Borough on the north coast of Wales overlooking the Irish Sea. It lies within the historic county of Denbighshire. Eight neighbouring communities are incorporated within its postal district. Established as its own separate parish in 1844 with just a small grouping of homes and farms where the community of Old Colwyn stands today, Colwyn Bay has expanded to become the second-largest community and business centre in the north of Wales as well as the 14th largest in the whole of Wales with the urban statistical area, including Old Colwyn, Rhos-on-Sea, and Mochdre and Penrhyn Bay, having a population of 34,284 at the 2011 census.
Denbigh is a market town and a community in Denbighshire, Wales. Formerly the county town of the historic county of Denbighshire until 1888, Denbigh's Welsh name translates to "Little Fortress"; a reference to its historic castle. Denbigh lies near the Clwydian Hills.
Sharleen Eugene Spiteri is a Scottish singer–songwriter and guitarist who has a contralto vocal range, best known as the lead singer of the rock band Texas, who rose to prominence in 1989 with the release of their debut single "I Don't Want a Lover". Their debut album, Southside (1989) was a commercial success, selling over two million copies. Follow up albums were less successful, however, the release of their fourth album White on Blonde (1997) returned the band to prominence, spawning the internationally successful singles "Say What You Want", "Halo", "Black Eyed Boy" and "Put Your Arms Around Me". Their commercial success continued during the late 1990s and into the early 2000s, with singles "In Our Lifetime", "Summer Son", "In Demand" and "Inner Smile". Following the release of their seventh album Red Book (2005), the band began a hiatus. In 2013, Texas's worldwide album sales were counted at 40 million records.
Le Gavroche was a restaurant at 43 Upper Brook Street in Mayfair, London. It was opened in 1967 by Michel and Albert Roux at 61 Lower Sloane Street, its premises until 1981. Albert's son Michel Roux Jr was the chef patron from 1991 until its closure in 2024. It was the first restaurant in the UK to be awarded three Michelin stars, which it held from 1982 to 1993.
Grand Slam is a 1978 sports comedy film produced by BBC Wales. The film starred Oscar-winning actor Hugh Griffith, Windsor Davies, Dewi "Pws" Morris and Sion Probert. The play was written for television by Gwenlyn Parry and then-head of drama for BBC Wales, John Hefin.
Llanelian Road is a multi-use stadium in Old Colwyn, North Wales and also known as the 4 Crosses Construction Arena for sponsorship purposes. It is currently used mostly for football matches and is the home ground of Colwyn Bay F.C. of the Cymru North.
Llandyrnog is a large village and community in Denbighshire, Wales lying in the valley of the River Clwyd, about 3 miles (4.8 km) from Denbigh and 5 miles (8.0 km) from Ruthin. The village has good road links to Denbigh and the main A541 road at Bodfari, and is served by buses number 76 and 53. The village contains the Church of St. Tyrnog's is a Grade II* listed building, and has a notable creamery on the outskirts and former hospital. The community includes the settlements of Waen, Ffordd-las and Llangwyfan.
Marcus Wareing is an English celebrity chef who was Chef-Owner of the one-Michelin-starred restaurant Marcus until its permanent closure in December 2023. Since 2014, Wareing has been a judge on MasterChef: The Professionals.

RGC 1404, formerly "Gogledd Cymru", is a rugby union team founded in 2008 and based in Colwyn Bay, Conwy. They currently play in the Welsh Premier Division; after winning Division 1 East at the first attempt in 2012–13, they spent three seasons in the Welsh Championship before earning promotion to the Premier Division in 2015–16. They finished fourth in their first season in the top flight, but also won the WRU Challenge Cup for the first time. They play at Eirias Stadium, which has a capacity of just over 6,000.
Wales on the Menu is a BBC Radio Wales series where restaurateur, writer and food critic Simon Wright challenges home cooks of Wales to get their dishes on the menu of top restaurants across the UK. They must survive the criticism of leading chefs before a panel of diners decides whether they have succeeded in putting Wales on the Menu.
Arthur Cheetham was an English-born Welsh filmmaker, who became the first of his profession to be based in Wales. His legacy is a collection of eight surviving films, including one of the oldest extant British football 'shorts' from 1898. Cheetham, along with fellow cinematic pioneer, William Haggar, are recognised as the only Welsh-based film makers of importance before the First World War.
The North Wales Crusaders is a professional rugby league club based in Colwyn Bay, Wales. They are the successors to the former Super League club Crusaders Rugby League. Crusaders compete in Betfred League 1, the third tier of English rugby league. Until the end of 2016 they played their home games at the Racecourse Ground in Wrexham. From 2017 to 2020 they were based at the Queensway Stadium in Wrexham, but also played several games at Hare Lane in Chester. In 2021 the club moved to the Eirias Stadium in Colwyn Bay.
The Whitebrook, formerly known as The Crown at Whitebrook, is a restaurant with rooms in Whitebrook, 6 miles (9.7 km) south-south-east of Monmouth, Monmouthshire, Wales, near the River Wye and the border with England. The building is thought to date from the 17th century and by the 19th century it was used as a roadside inn. Its restaurant was run by Chef Patron James Sommerin until 2013; it gained a Michelin star in 2007. It contains eight double rooms and a 2-acre (0.81 ha) garden. On 7 March 2013, it closed because of financial difficulties; at the time it had the longest held Michelin star in Wales. Critics praised the food under Sommerin, but have criticised the difficulty in finding the restaurant. It re-opened in October 2013 under new chef and owner Chris Harrod, and regained the Michelin star in 2014. Harrod serves a menu using locally produced meat and vegetables along with foraged ingredients such as charlock, hedge bedstraw and pennywort.
Eirias Stadium, known for sponsorship reasons as Stadiwm CSM, is a multi-purpose stadium that is part of the outdoor complex of the Eirias Events Centre in Eirias Park, Colwyn Bay, Wales. It is home to the Principality Premiership team, RGC 1404 and RFL League 1 team North Wales Crusaders. The stadium had been used for sporting events, until its redevelopment in 2011, where it now can host international televised events.
The Checkers, is a restaurant with rooms in Montgomery, Powys, Wales. Historically, the building was used as a coaching inn dating from the 17th century. Until the 2000s, it was used as a pub/hotel. It was converted into a French restaurant in 2012 and under chef Stephane Borie, it was awarded a Michelin star later that year. There are two main rooms in the restaurant, and three hotel rooms. It has received a mixed reception from critics, who have praised particular dishes but criticised the atmosphere. It serves both modern and classic French dishes, and in 2016, switched to only using set menus. In 2018, The Checkers moved away from their Michelin star and opened a breakfast and lunch restaurant renamed Checkers Pantry.
The Walnut Tree is a restaurant in Llanddewi Skirrid, Monmouthshire, Wales. It is run by chef Shaun Hill and holds a Michelin star. It was previously owned by Franco Taruschio for more than 30 years, and had previously held a star when Stephen Terry was head chef there. It closed briefly in 2007, which the owners blamed on an appearance on Ramsay's Kitchen Nightmares three years earlier. It regained its Michelin star in 2010 and continues to hold it.
Restaurant Andrew Fairlie, also known as Andrew Fairlie at Gleneagles, is a restaurant serving British cuisine located within the Gleneagles Hotel near Auchterarder, Perth and Kinross, Scotland. In operation since 2001, it was run by chef Andrew Fairlie alongside his head chef Stephen McLaughlin who took over the kitchen after his death. It currently holds two Michelin stars, having been awarded them in 2006. It is the only restaurant in Scotland to hold two Michelin stars.
