Must weight is a measure of the amount of sugar in grape juice (must) and, hence, indicates the amount of alcohol that could be produced if it is all fermented to alcohol, rather than left as residual sugar. [1]
In France and many other countries, the grape must density is often recalculated to show potential alcohol, the percent alcohol content that would be the result if the must were fermented to a completely dry wine.
Must weights are commonly measured in the vineyard to monitor the ripeness of the grapes, which helps select the time of harvest. For this purpose, it is usually measured by using a refractometer. A few grapes are crushed between the fingers and the must is dripped onto the glass of the refractometer. The refractometer will be calibrated in a must weight scale, but as refractometers actually measure refractive index (of the grape must in this case), the must weight scale on the refractometer is in effect an indirect measurement, with refractive indices having been pre-converted to their must weight equivalents.
A hydrometer or lactometer is an instrument used for measuring density or relative density of liquids based on the concept of buoyancy. They are typically calibrated and graduated with one or more scales such as specific gravity.
Ice wine is a type of dessert wine produced from grapes that have been frozen while still on the vine. The sugars and other dissolved solids do not freeze, but the water does, allowing for a more concentrated grape juice to develop. The grapes' must is then pressed from the frozen grapes, resulting in a smaller amount of more concentrated, very sweet juice. With ice wines, the freezing happens before the fermentation, not afterwards. Unlike the grapes from which other dessert wines are made, such as Sauternes, Tokaji, or Trockenbeerenauslese, ice wine grapes should not be affected by Botrytis cinerea or noble rot, at least not to any great degree. Only healthy grapes keep in good shape until the opportunity arises for an ice wine harvest, which in extreme cases can occur after the New Year, on a northern hemisphere calendar. This gives ice wine its characteristic refreshing sweetness balanced by high acidity. When the grapes are free of Botrytis, they are said to come in "clean". This results in a very complex and sweet wine. Much ice wine is made from the grapes Riesling, Vidal, Cabernet Franc and Cabernet Sauvignon, but there is also ice wine made from Shiraz, Merlot, Sangiovese and others.

Chaptalization is the process of adding sugar to unfermented grape must in order to increase the alcohol content after fermentation. The technique is named after its developer, the French chemist Jean-Antoine-Claude Chaptal. This process is not intended to make the wine sweeter, but rather to provide more sugar for the yeast to ferment into alcohol.
The subjective sweetness of a wine is determined by the interaction of several factors, including the amount of sugar in the wine, but also the relative levels of alcohol, acids, and tannins. Sugars and alcohol enhance a wine's sweetness, while acids cause sourness and bitter tannins cause bitterness. These principles are outlined in the 1987 work by Émile Peynaud, The Taste of Wine.
Refractometry is the analytical method of measuring substances' refractive index in order to, for example, assess their composition or purity. A refractometer is the instrument used to measure refractive index ("RI"). Although refractometers are best known for measuring liquids, they are also used to measure gases and solids; such as glass and gemstones.
Degrees Brix is a measure of the dissolved solids in a liquid, and is commonly used to measure dissolved sugar content of an aqueous solution. One degree Brix is 1 gram of sucrose in 100 grams of solution and represents the strength of the solution as percentage by mass. If the solution contains dissolved solids other than pure sucrose, then the °Bx only approximates the dissolved solid content. For example, when one adds equal amounts of salt and sugar to equal amounts of water, the degrees of refraction (BRIX) of the salt solution rises faster than the sugar solution. The °Bx is traditionally used in the wine, sugar, carbonated beverage, fruit juice, fresh produce, maple syrup and honey industries. The °Bx is also used for measuring the concentration of a cutting fluid mixed in water for metalworking processes.
The Oechsle scale is a hydrometer scale measuring the density of grape must, which is an indication of grape ripeness and sugar content used in wine-making. It is named for Ferdinand Oechsle (1774–1852) and it is widely used in the German, Swiss and Luxembourgish wine-making industries. On the Oechsle scale, one degree Oechsle (°Oe) corresponds to one gram of the difference between the mass of one litre of must at 20 °C and 1 kg. For example, must with a specific mass of 1084 grams per litre has 84 °Oe.

A refractometer is a laboratory or field device for the measurement of an index of refraction (refractometry). The index of refraction is calculated from the observed refraction angle using Snell's law. For mixtures, the index of refraction then allows to determine the concentration using mixing rules such as the Gladstone–Dale relation and Lorentz–Lorenz equation.
Gravity, in the context of fermenting alcoholic beverages, refers to the specific gravity, or relative density compared to water, of the wort or must at various stages in the fermentation. The concept is used in the brewing and wine-making industries. Specific gravity is measured by a hydrometer, refractometer, pycnometer or oscillating U-tube electronic meter.

Austrian wines are mostly dry white wines, though some sweeter white wines are also produced. About 30% of the wines are red, made from Blaufränkisch, Pinot noir and locally bred varieties such as Zweigelt. In viticulture, ripeness is the completion of the ripening process of wine grapes on the vine which signals the beginning of harvest. What exactly constitutes ripeness will vary depending on what style of wine is being produced and what the winemaker and viticulturist personally believe constitutes ripeness. Once the grapes are harvested, the physical and chemical components of the grape which will influence a wine's quality are essentially set so determining the optimal moment of ripeness for harvest may be considered the most crucial decision in winemaking.
The International Commission for Uniform Methods of Sugar Analysis (ICUMSA) is an international standards body, founded in 1897, that publishes detailed laboratory procedures for the analysis of sugar.
Traditional balsamic vinegar is a type of balsamic vinegar produced in Modena and the wider Emilia Romagna region of Italy. Unlike inexpensive "Balsamic Vinegar of Modena" (BVM), Traditional Balsamic Vinegar (TBV) is produced from cooked grape must, aged at least 12 years, and protected under the European Protected Designation of Origin (PDO) system, fetching higher prices. Although the names are similar, TBV and the inexpensive imitation BVM are very different.
When drinking beer, there are many factors to be considered. Principal among them are bitterness, the variety of flavours present in the beverage and their intensity, alcohol content, and colour. Standards for those characteristics allow a more objective and uniform determination to be made on the overall qualities of any beer.
Wachau is one of Austria's most established and notable wine regions, specializing in dry wines made from Riesling and Grüner Veltliner. Located in Lower Austria along the Danube, west of Vienna and Krems an der Donau, it is one of the westernmost wine producing regions in Austria with only a few scattered plantings in Tyrol being further west. While most of Austria follows a wine classification systems based on ripeness and harvest must weight that parallels the German wine classification system, Wachau wines have a unique classification system. The three classification levels for Wachau wine include Steinfeder for wines up to 11.5% alcohol level, Federspiel for wines between 11.5–12.5% and Smaragd that must have a minimum of 12.5% alcohol level. Despite its renown, the Wachau is a small wine region that usually accounts for only around 3% of Austria's wine production.
The role of yeast in winemaking is the most important element that distinguishes wine from fruit juice. In the absence of oxygen, yeast converts the sugars of the fruit into alcohol and carbon dioxide through the process of fermentation. The more sugars in the grapes, the higher the potential alcohol level of the wine if the yeast are allowed to carry out fermentation to dryness. Sometimes winemakers will stop fermentation early in order to leave some residual sugars and sweetness in the wine such as with dessert wines. This can be achieved by dropping fermentation temperatures to the point where the yeast are inactive, sterile filtering the wine to remove the yeast or fortification with brandy or neutral spirits to kill off the yeast cells. If fermentation is unintentionally stopped, such as when the yeasts become exhausted of available nutrients and the wine has not yet reached dryness, this is considered a stuck fermentation.
