Savatiano

Savatiano (or Savvatiano) is a white Greek wine grape used primarily in the wine Retsina. It is one of Greece's most widely planted grape varieties and is known for its resistance to drought condition. It is mostly planted throughout central Greece, particularly in Attica near Athens. In Retsina, the naturally low acidity of the grape is sometimes compensated for by the addition of Assyrtiko and Rhoditis in the blend. [1]

Wine regions

In addition to Attica, the grape is also found in Euboea and the Bulgarian town of Pomorie which used to be a Greek colony known as Anchialos. While Assyrtiko is the most commonly blending partner for Savatiano in Attica, Rhoditis is used most commonly on Euboea and Pomorie. In Kantza, a village east of Paiania, a single varietal style of Savatiano is made without the Aleppo pine resin found in Retsina. [2]

Retsina is a Greek white resinated wine, which has been made for at least 2,000 years. Its unique flavor is said to have originated from the practice of sealing wine vessels, particularly amphorae, with Aleppo Pine resin in ancient times. Before the invention of impermeable glass bottles, oxygen caused many wines to spoil within the year. Pine resin helped keep air out, while infusing the wine with resin aroma. The Romans began to use barrels in the 3rd century AD, removing any oenological necessity for resin, but the flavor itself was so popular that the style is still widespread today.

Marsanne Variety of grape

Marsanne is a white wine grape, most commonly found in the Northern Rhône region. It is often blended with Roussanne. In Savoie the grape is known as grosse roussette. Outside France it is also grown in Switzerland, Spain, Australia, New Zealand, Canada and the United States.

Aligoté is a white grape used to make dry white wines, especially in the Burgundy region of France where it was first recorded in the 18th century. Since it is tolerant to cold, this variety is also cultivated in Eastern European countries. In 2004, it was the 22nd most planted vine variety in the world at 45,000 hectares.

Mourvèdre is a red wine grape variety grown in many regions around the world including the Rhône and Provence regions of France, the Valencia and Jumilla and Yecla denominaciones de origen (DOs) of Spain, as well as the Balearic Islands, California and Washington and the Australian regions of South Australia and New South Wales, as well as South Africa. In addition to making red varietal wines, Mourvèdre is a prominent component in "GSM" blends. The variety is also used to make rosé and port-style fortified wines.

Agiorgitiko Variety of grape

Agiorgitiko is a red Greek wine grape variety that, as of 2012, was the most widely planted red grape variety in Greece, ahead of Xynomavro. The grape has traditionally been grown in the Nemea region of the Peloponnese but can be found throughout the country including Attikí (Attica) and Makedonía (Macedonia).

Assyrtiko Variety of grape

Assyrtiko or Asyrtiko is a white Greek wine grape indigenous to the island of Santorini. Assyrtiko is widely planted in the arid volcanic-ash-rich soil of Santorini and other Aegean islands, such as Paros. It is also found on other scattered regions of Greece such as Chalkidiki. Assyrtiko is also being grown by Jim Barry Wines in Clare Valley, South Australia, at the Abbey of New Clairvaux in Northern California since 2011, and at Kefi Winery in Monroe, North Carolina by a first generation Greek family. The original Assyrtiko cuttings were imported in the USA in 1948 by Harold Olmo, grape breeder at the University of California, Davis, where they were stored until the abbey of New Clairvaux took interest in the early 2000s.

Poulsard Variety of grape

Poulsard is a red French wine grape variety from the Jura wine region. The name Ploussard is used mainly around the town of Pupillin but can appear on wine labels throughout Jura as an authorized synonyms. While technically a dark-skinned noir grape, the skins of Poulsard are very thin with low amounts of color -phenols and produces very pale colored red wines, even with extended maceration and can be used to produce white wines. Because of this, Poulsard is often blended with other red-skin varieties or used to produce lightly colored rosé wines. Additionally the grape is used to make blanc de noir white wines and sparkling cremants.

Rhoditis Variety of grape


Rhoditis is a pink-skinned Greek wine grape traditionally grown in the Peloponnese region of Greece. The grape was highly valued in the Greek wine industry prior to the phylloxera outbreak due to its ability to ripen late and maintain its acidity in hot climates like those of Peloponnese and Thessaly. However its susceptibility to powdery mildew and phylloxera dramatically reduced it plantings throughout the 20th century. Today it is most commonly blended with Savatiano in making the Greek wine Retsina.

Athiri or Athiri Aspro is a white Greek wine grape used to make Retsina on the island of Rhodes.

Resinated wine

Resinated wine is a type of wine which derives part of its flavor from exposure to tree resins, most generally pine resin. Prior to the widespread use of barrels in Europe, wine was stored in amphorae, often sealed with Aleppo pine resin. Wines thus sealed were flavored by the resin, and over time this became a feature of the wine itself rather than an unwanted side effect.

Santorini (wine) Greek wine region

Santorini is a Greek wine region located on the archipelago of Santorini in the southern Cyclades islands of Greece. Wine has been produced there since ancient times, but it was during the Middle Ages that the wine of Santorini became famous worldwide under the influence of the Republic of Venice. The Italian influence is still present in modern Santorini winemaking: the most famous Tuscan sweet wine is called Vin Santo just like Santorini's Vinsanto/Visanto. It is made in a passito style from grapes dried in the sun after harvest.

Albarola Variety of grape

Albarola is a white Italian wine grape variety grown in the northwest Italy. It is most commonly found in the Liguria region where producers in the Cinqueterre Denominazione di origine controllata (DOC) use it as a blending component. Wine expert Jancis Robinson describes the wine made from Albarola as fairly "neutral" in profile. Outside of Liguria, the grape was historically grown in Sicily but for most of the 20th century has been declining in plantings along with other ancient Sicilian varieties like Albanello, Damaschino, Minella bianca and Montonico bianco.

Olmo grapes are wine and table grape varieties produced by University of California, Davis viticulturist Dr. Harold Olmo. Over the course of his nearly 50-year career, Dr. Olmo bred a wide variety of both grapes by means of both crossing varieties from the same species or creating hybrid grapes from cultivars of different Vitis species.

Treixadura Variety of grape

Treixadura or Trajadura is white Portuguese wine grape variety grown primarily in the Vinho Verde wine region of northeast Portugal and the Galician wine regions of Ribeiro and Rías Baixas in Spain where the variety is known as Treixadura. The grape is primarily a blending variety that adds body and light lemony aromatics to wines. It is most commonly blended with Loureiro and Alvarinho in Rías Baixas while in Ribeiro it is often blended with Torrontés and Lado.
