Founded in June, 2017, by cofounder Dipo Alam along with Juan Carlos Estala and Joel Marquez. [3] [17] Alam had originally been a franchisee of Potato Corner, and he is also the cofounder of the Spring Rollin' and Pho Kup restaurants which serve spring rolls and pho. [2] [3] The parents of Estala and Marquez own La Michoacana de Paquime dessert shop in Albuquerque. [3]
Following its initial growth, the first licensees for the chain were John Ortiz, Veronica Ortiz, Marcus Palafox, and Yesica Palafox. [18] Navajo entrepreneur Franklin Yazzie opened the first location in Mesa, Arizona. [19] There are plans to open international locations in Indonesia and Singapore. [18]
