A truckle of cheese is a cylindrical wheel of cheese, usually taller than it is wide, and sometimes described as barrel-shaped. [1] [2] The word is derived from the Latin trochlea , 'wheel, pulley'. Truckles vary greatly in size, from the wax-coated cheeses sold in supermarkets, to 25-kilogram or larger artisanal cheeses.

Beecher's Handmade Cheese is an artisan cheesemaker and retail shop with locations in the Pike Place Market, Seattle, Washington and New York City's Flatiron District. The company was founded by Kurt Beecher Dammeier in 2003 and opened in the Pike Place Market after Dammeier obtained a difficult to obtain storefront lease in the Market. Because Dammeier had never been a cheesemaker, he sought out the assistance of Brad Sinko, who helped run a family cheese-making business in Oregon. A second location was opened in 2011 in the Flatiron neighborhood of Manhattan in New York City.

Kunik is a brand of cow and goat milk cheese. It is described by the producer as a semi-aged, triple cream wheel cheese made from 25% Jersey cow cream and 75% goat's milk. It has an edible, bloomy white rind; a tangy, buttery flavor; and a thick, smooth, creamy texture. The addition of high-milkfat Jersey cow cream makes the cheese more rich and flavorful than a brie cheese, but less pungent than a pure goat cheese. Anne Saxelby, reviewing the cheese for Esquire, stated "it may very well be the sexiest cheese in the U.S.A."

Gamonéu cheese is a fatty Spanish cheese made in certain parts of the Principality of Asturias. Taking its name from the village of Gamonéu where it was originally made, Gamonéu cheese has a Protected Designation of Origin. It is a lightly smoked cheese with a thin, natural rind that is coloured brownish with some red, green and blue patches. Moulds on the rind slightly invade the interior of the cheese. Similar to other cheeses in the region, Gamonéu is made from a combination of cow, goat and sheep milks. Gamonéu cheese is sold in the form of a truckle cylinders with flat ends in weights varying between 500g to 7 kg (15 lbs). Gamonéu comes in two distinct forms: "del Puertu", which is made in the high passes and "del Valle", which is made in the lower valleys. Gamonéu del Puertu is harder and drier and is the rarer of the two forms as production is limited to the summer months in the uplands. Gamonéu del Valle is richer and creamer and production continues year-round.
