Kuwaiti cuisine is a fusion of Arabian, Iranian, Indian and Mediterranean cuisines. [1] [2] Kuwaiti cuisine is part of the Eastern Arabian cuisine. A prominent dish in Kuwaiti cuisine is machboos , a rice-based dish usually prepared with basmati rice seasoned with spices, and chicken or mutton.

Seafood is a significant part of the Kuwaiti diet, especially fish. [3] Mutabbaq samak is a national dish in Kuwait. Other local favourites are hamour (grouper), which is typically served grilled, fried, or with biryani rice because of its texture and taste; safi (rabbitfish); maid (mulletfish); and sobaity (sea bream).

Kuwait's traditional flatbread is called Iranian khubz . It is a large flatbread baked in a special oven and it is often topped with sesame seeds. Numerous local bakeries dot the country; the bakers are mainly Iranians (hence the name of the bread, "Iranian khubuz"). Bread is often served with mahyawa fish sauce.

There are many other cuisines available due to the international workforce in Kuwait.

Before a meal it is customary to wash hands as cutlery is often not used while eating, with the exception of a serving spoon for each respective dish.

Machbūs, a meal consisting of rice, meat, and vegetables, is the national dish in Qatar, typically made with either lamb or chicken and slow-cooked to give it a depth of flavour. Seafood and dates are staple food items in the country. Many of these dishes are also used in other countries in the region, because they share many commonalities. In other parts of the region some of the dishes have different names or use slightly different ingredients. One proponent of the importance of Qatar's culinary heritage is chef Noor Al Mazroei, who adapts traditional recipes to include vegan and gluten-free alternatives.

The Arabs arrived in the Nusantara archipelago to trade and spread Islam. In Java, since the 18th century AD, most of Arab traders settled on the north coast and diffuse with indigenous, thus affecting the local cuisine culture, especially in the use of goat and mutton meat as well as ghee in cooking.

Indian Indonesian cuisine is characterized by the mixture of Indian cuisine with local Indonesian-style. This cuisine consists of adaptations of authentic dishes from India, as well as original creations inspired by the diverse food culture of Indonesia. Indian influence can be observed in Indonesia as early as the 4th century. Following the spread of Islam to Indonesia and trading, Muslim Indian as well as Arab influences made their way into Indonesian cuisine. Examples include Indian biryani, murtabak, curry and paratha that influenced Acehnese, Minangkabau, Malay, Palembangese, Betawi and Javanese cuisine.

Angika cuisine, originating from the Anga region of Bihar and Jharkhand in India is rooted in the culinary traditions of this historical area. Angika cuisine is a culinary tradition hailing from the historic Anga region, which encompasses parts of modern-day Bihar and Jharkhand states in India. Angika cuisine has dishes with local ingredients, cooking techniques, and cultural influences.
