The 1981 Waterford Senior Hurling Championship was the 81st staging of the Waterford Senior Hurling Championship since its establishment by the Waterford County Board in 1897.
Tallow were the defending champions.
On 4 October 1981, Mount Sion won the championship after a 4–13 to 1–14 defeat of Dunhill in the final. [1] This was their 25th championship title overall and their first title since 1975.
Mount Sion is a Gaelic Athletic Association club located in Waterford City, County Waterford, Ireland. It was founded by teachers in the school of the same name. Although technically separate from the school, the club still maintains a close relationship with the school, sharing the same sports facilities in the city.

The club has won the Waterford Senior Hurling Championship four times, first in 1936 and more recently in 1980, 1984 and 1985. Tallow presently have four players on the Waterford county panel, James Murray, Aidan Kearney, Mark O' Brien and Thomas Ryan.
Passage GAA is a Hurling Club with Club Grounds the East Waterford village of Passage East with Players representing the Club from nearby areas of Dunmore East, Cheekpoint, Woodstown, Faithlegg, Ballymacaw and environs. Passage came close a number of times to capturing the Senior Hurling County Title losing three Waterford Senior Hurling Finals during the 1990s. Eventually, the Club captured the County Senior Hurling Title in 2013, 17 years since their last final, on a score line of Ballygunner 3-13 Passage 3-16, coming from 7 points down to score 2-4 without reply.

The 2020 fixtures were announced in October 2019. Games were initially scheduled to begin on 9 May 2020. Due to the impact of the COVID-19 pandemic on Gaelic games, the competition was delayed before beginning on 24 October 2020 and ending on 13 December 2020.
