The Culinary Heritage of Switzerland (German : Kulinarisches Erbe der Schweiz, French : Patrimoine culinaire suisse, Italian : Patrimonio culinario svizzero, Romansh : Patrimoni culinar svizzer) is a multilingual online encyclopedia of traditional Swiss cuisine and produce.
The project was initiated after Swiss MP Josef Zisyadis's parliamentary motion in 2000. [1] After obtaining CHF 2 million of funding by the Swiss federal government, the Swiss cantons and private sponsors, [2] the private association "Culinary Heritage of Switzerland" was founded in 2003.
The association hired a team of researchers, including ethnologists and historians, to write the articles and carry out field research by interviewing Swiss bakers, butchers, cultural historians, archivists and farmer's wives. [1] It made the encyclopedia, with an initial scope of some 400 articles, available to the public on 9 December 2008 at no charge. [3]
To be included in the association's database, a food must be recognised as traditionally Swiss, have been produced for at least 40 years and remain in production. [1] The project's scope is limited to processed foodstuffs, such as cheeses or meat products. It does not include unprocessed food (with a few exceptions), wines, recipes or dishes.

Ticino, sometimes Tessin, officially the Republic and Canton of Ticino or less formally the Canton of Ticino, is one of the 26 cantons forming the Swiss Confederation. It is composed of eight districts and its capital city is Bellinzona. It is also traditionally divided into the Sopraceneri and the Sottoceneri, respectively north and south of Monte Ceneri. Red and blue are the colours of its flag.
Vorarlberg is the westernmost state of Austria. It has the second-smallest geographical area after Vienna and, although it also has the second-smallest population, it is the state with the second-highest population density. Two thirds of the country are situated above 1,000m. It borders three countries: Germany, Switzerland, and Liechtenstein. The only Austrian state that shares a border with Vorarlberg is Tyrol, to the east.
Slow Food is an organization that promotes local food and traditional cooking. It was founded by Carlo Petrini in Italy in 1986 and has since spread worldwide. Promoted as an alternative to fast food, it strives to preserve traditional and regional cuisine and encourages farming of plants, seeds, and livestock characteristic of the local ecosystem. It promotes local small businesses and sustainable foods. It also focuses on food quality, rather than quantity. It was the first established part of the broader slow movement. It speaks out against overproduction and food waste. It sees globalization as a process in which small and local farmers and food producers should be simultaneously protected from and included in the global food system.
Friedrich Christian Accum or Frederick Accum was a German chemist, whose most important achievements included advances in the field of gas lighting, efforts to keep processed foods free from dangerous additives, and the promotion of interest in the science of chemistry to the general populace. From 1793 to 1821 Accum lived in London. Following an apprenticeship as an apothecary, he opened his own commercial laboratory enterprise. His business manufactured and sold a variety of chemicals and laboratory equipment. Accum, himself, gave fee-based public lectures in practical chemistry and collaborated with research efforts at numerous other institutes of science.
Muesli is a cold Swiss breakfast dish, the primary ingredient of which is rolled oats. Traditionally, it is set to soak overnight and eaten the next morning. Additional ingredients, such as grains, nuts, seeds, and fresh or dried fruits are sometimes added, along with milk or cream, a small amount of citrus juice, and honey to add sweetness. Yoghurt, other milk products, or milk substitutes are now commonly added to both homemade and commercially packaged muesli recipes.

Kirschwasser, or just Kirsch, is a clear, colourless brandy from Germany, Switzerland, and France, traditionally made from double distillation of morello cherries. It is now also made from other kinds of cherries. The cherries are fermented completely, including their stones. Unlike cherry liqueurs and cherry brandies, Kirschwasser is not sweet. It is sometimes distilled from fermented cherry juice.
Sbrinz is a very hard cheese produced in Central Switzerland. It is often used as grated cheese in Swiss cuisine, although it is also eaten in small pieces. The cheese is produced in only 42 dairies in Central Switzerland. Only local cow's milk is used when producing this cheese. It is kept in the region until ready for consumption. It is the hardest of Swiss cheeses together with Berner Hobelkäse.
The Encyclopaedia of Islam (EI) is a reference work that facilitates the academic study of Islam. It is published by Brill and provides information on various aspects of Islam and the Islamic world. It is considered to be the standard reference work in the field of Islamic studies. The first edition was published in 1913–1938, the second in 1954–2005, and the third was begun in 2007.
The Historical Dictionary of Switzerland is an encyclopedia on the history of Switzerland. It aims to present the history of Switzerland in the form of an encyclopaedia, published both on paper and on the internet, in three of the country's national languages: German, French and Italian. When it was completed at the end of 2014, the paper version contained around 36,000 articles divided into thirteen volumes. At the same time, a reduced edition of the dictionary has been published in Romansh under the title Lexicon istoric retic (LIR), and constitutes the first specialist dictionary in the Rhaeto-Romance, Switzerland.
Ingo Heidbrink is a German maritime historian who is Professor of History with a specialization on Maritime History at Old Dominion University in Norfolk, Virginia. He is specialized on Fisheries History, Traditional Watercraft and Museum Ships, Methodology of Maritime History and interdisciplinary research projects. Since Summer 2021 he is Chair of the Department of History at Old Dominion University.
Tirggel are traditional Christmas biscuits from Zürich, Switzerland. Made from flour and honey, they are thin, hard, and sweet.
Basler Brot, in Basel also Basler Laibli, is a bread traditionally made in the Swiss cantons of Basel-Stadt and Basel-Landschaft, but now popular in all of Switzerland. It is distinguished from other Swiss breads by a very soft, porous dough and a mealy, crunchy crust.
Zürcher Murren, also called pain bernois, Bernerweggen, Spitzweggen, geschnittene Weggli or Zackenweggen are a type of bread roll traditionally made in the German-speaking part of Switzerland and, more rarely, in the Romandy.
The historiography of Switzerland is the study of the history of Switzerland.
Pigeon photography is an aerial photography technique invented in 1907 by the German apothecary Julius Neubronner, who also used pigeons to deliver medications. A homing pigeon was fitted with an aluminium breast harness to which a lightweight time-delayed miniature camera could be attached. Neubronner's German patent application was initially rejected, but was granted in December 1908 after he produced authenticated photographs taken by his pigeons. He publicized the technique at the 1909 Dresden International Photographic Exhibition, and sold some images as postcards at the Frankfurt International Aviation Exhibition and at the 1910 and 1911 Paris Air Shows.
Culinary diplomacy, gastrodiplomacy or food diplomacy is a type of cultural diplomacy, which itself is a subset of public diplomacy. Its basic premise is that "the easiest way to win hearts and minds is through the stomach". Official government-sponsored culinary diplomacy programs have been established in Taiwan, South Korea, Singapore, Thailand, Malaysia, Indonesia, Lebanon, Peru, Israel, the United States, Cambodia, Japan, and Nordic countries.
