The International Culinary Center (originally known as the French Culinary Institute) was a private for-profit culinary school headquartered in New York City. The facilities included professional kitchens for hands-on cooking and baking classes, wine tasting classrooms, a library, theater, and event spaces. The school merged with the Institute of Culinary Education in 2000.

History

The International Culinary Center was founded by Dorothy Cann Hamilton [1] in 1984 as the French Culinary Institute. [2] When the school first opened, it was visited by chef Julia Child, who reportedly arranged to have the school profiled on Good Morning America one week later. [3]

In 2020, the International Culinary Center combined with the Institute of Culinary Education, citing issues related to the COVID-19 pandemic for its closure. [2]

Locations

The International Culinary Center had two campuses, one in New York City and the other in the San Francisco Bay area. [4] The New York City location included the L'Ecole restaurant on the ground floor as well as a Culinary Theater that hosted events, forums, and lectures from graduates. [5] The International Culinary Center was also home to FCI Catering & Events, which created and catered both on- and off-premises private events. [6] Its California location opened in 2011 in Campbell, in the San Francisco Bay Area. [4] The facilities consisted of kitchens, a library, theaters, an event space and a wine tasting room. The facility was the former location of the Professional Culinary Institute. [3]

Jacques Pépin is a French chef, author, culinary educator, television personality, and artist. After having been the personal chef of French President Charles de Gaulle, he moved to the US in 1959 and after working in New York's top French restaurants, refused the same job with President John F. Kennedy in the White House and instead took a culinary development job with Howard Johnson's. During his career, he has served in numerous prestigious restaurants, first, in Paris, and then in America. He has appeared on American television and has written for The New York Times, Food & Wine and other publications. He has authored more than 30 cookbooks, some of which have become best sellers. Pépin was a longtime friend of the American chef Julia Child, and their 1999 PBS series Julia and Jacques Cooking at Home won a Daytime Emmy Award. He also holds a BA and a MA from Columbia University in French literature.

The James Beard Foundation is a New York City–based national non-profit culinary arts organization named in honor of James Beard, a prolific food writer, teacher, and cookbook author, who was also known as the "Dean of American Cookery." The programs run the gamut from elegant guest-chef dinners to scholarships for aspiring culinary students, educational conferences, and industry awards. In the spirit of James Beard's legacy, the foundation not only creates programs that help educate people about American cuisine, but also supports and promotes the chefs and other industry professionals who are behind it.

Copia: The American Center for Wine, Food & the Arts was a non-profit museum and educational center in downtown Napa, California, dedicated to wine, food and the arts of American culture. The center, planned and largely funded by vintners Robert and Margrit Mondavi, was open from 2001 to 2008. The 78,632-square-foot (7,305.2 m2) museum had galleries, two theaters, classrooms, a demonstration kitchen, a restaurant, a rare book library, and a 3.5-acre (1.4 ha) vegetable and herb garden; there it hosted wine and food tasting programs, exhibitions, films, and concerts. The main and permanent exhibition of the museum, "Forks in the Road", explained the origins of cooking through to modern advances. The museum's establishment benefited the city of Napa and the development and gentrification of its downtown.

Daisy Maria Martinez is an actress, model, chef, television personality, and author, who hosted a PBS television series, Daisy Cooks!, which launched on April 15, 2005.

Chef's Story is a 26-part Public Television series featuring Dorothy Cann Hamilton interviewing well-known chefs and restaurateurs. Hamilton, founder and CEO of The French Culinary Institute, conducts the interviews in front of culinary students in the first half of each episode. Each chef then moves into a kitchen in the second half and prepares a dish they consider signature or instructive. The FCI's International Culinary Theater acts as the host for each episode.

Center for Culinary Arts, Manila (CCA) is an institution which provides culinary education in the Philippines. CCA, Manila was formally established in 1996 and is currently located in Katipunan Avenue, Quezon City, Philippines. CCA, Manila has satellite campuses in Farmers Market, Cubao; a Restaurant School at SM Mall of Asia called Oceana and at Eastwood Mall called CCA Kitchen. CCA offers diploma and certificate programs accredited by the accrediting commission of the American Culinary Federation. Christina Machamer is an American chef who won in the fourth season of Fox Network's reality cooking show Hell's Kitchen. She was awarded the position of "senior sous chef" at Gordon Ramsay's then-new restaurant at The London West Hollywood, where she earned a $250,000 yearly salary.

Dorothy Cann Hamilton was the founder and CEO of the International Culinary Center, which she founded as The French Culinary Institute (FCI) in 1984. She was also president of the Friends of the USA Pavilion for Expo Milano 2015. WomanzWorld described her as "one of the most influential forces shaping the American culinary landscape today".

The Culinary Institute of America at Copia is a branch campus of the private culinary college the Culinary Institute of America. The CIA at Copia, located adjacent to the Oxbow Public Market in downtown Napa, California, opened its doors in 2016. The CIA venue provides food- and wine-related courses to visitors. The CIA at Copia and The Culinary Institute of America at Greystone make up the school's California branch.

Antonia Marie Lofaso is an American celebrity chef and restaurateur. She has appeared on the reality television shows Top Chef, Chopped, Cutthroat Kitchen and Restaurant Startup, among others. Lofaso owns the restaurants Black Market Liquor Bar, Scopa Italian Roots, and DAMA in Los Angeles, California.

Kwame Onwuachi is a Nigerian-American chef based in New York City, New York. A published author and restaurateur, he also appeared as a contestant on Top Chef in 2015. He was recognized by Food & Wine magazine, Esquire magazine, and the James Beard Foundation as "Rising Star Chef of the year" in 2019.

Carla Lalli Music is an American chef, cookbook author, and YouTube personality. She was a food editor at large of Bon Appétit and was known for her appearances in videos produced for the magazine's YouTube channel, most notably as the host of Back-to-Back Chef. Music left the magazine in 2020 in response to allegations that Bon Appétit and Condé Nast Entertainment had engaged in racial discrimination.
