Lettonie was a restaurant owned and run by chef Martin Blunos; it was located in Bristol until 1998 when it relocated to Bath, Somerset. It was awarded a Michelin star in 1992, and a second in 1994; these were held until the restaurant was closed in 2001. [1]
Lettonie was first opened by Martin Blunos in Stoke Bishop, Bristol in 1988. [2] The restaurant was named Lettonie; the French word for Latvia. [3] The restaurant could seat 24 diners, but the French cuisine was considered to be at odds with the location – the restaurant was located in a shopping parade. [4] After nine years, the restaurant was relocated under the same name some 11 miles (18 km) to his hometown of Bath, Somerset. While in the second location at Newbridge House, it became a restaurant with rooms. [2] The building was a Grade II listed building. [5] [6] The location had previously been a hotel with 9 bedrooms, but under Blunos, these were reduced to 4, and a 34-seat restaurant and an 8-seat private dining room were installed. [4]
Blunos closed the restaurant after 13 years, with a drop in advanced bookings from the United States blamed due to both the foot-and-mouth outbreak and the September 11 attacks. [7] After the closure of Lettonie in September 2001, Blunos opened Blinis in Bath, two months later. [8] This held two Michelin stars for a single edition of the guide in 2002. [9] [10]
The menu served at Lettonie was predominantly French in nature, although featured elements of Latvian cuisine. Dishes include a pork belly served with morels and a celeriac purée; at the time, pork belly was an unusual dish to be served in a fine-dining restaurant. Blunos explained that he had originally had a pork tenderloin as well, but since diners preferred the belly dish, the fillet was dropped. [4]
The signature dish of the restaurant was scrambled duck egg, which was flambéed tableside with vodka. [4] This was then topped with Sevruga caviar, and served with both buckwheat and plain blinis as well as chilled vodka. [4] A second dish which Blunos became well known for at Lettonie was one which appeared to be boiled egg and toast soldiers. It was, however, a hollowed out egg filled with vanilla cream and mango coulis. This was then served with shortbread that had been sprinkled with sugar and grated chocolate. [4]
Lettonie was first awarded a Michelin star in 1992 while located in Bristol. It was awarded a second star in 1994, and retained those when the restaurant moved to Bath in 1998 until it was permanently closed in 2001. [9] In 1999, Harden's restaurant guide listed Lettonie as among the best in the country. [11]

The Box Tree is a restaurant located in Ilkley, West Yorkshire, England. Owned by Adam Frontal, Yorkshire businessman, who is operating the restaurant with an emphasis of remaining very current within the fine dining offering and experience. Current Executive Chef, Brayden Davies, has been leading the kitchen since the beginning of 2023, having worked at multiple Michelin star restaurants, growing its ever strong reputation and now currently offers a new tasting menu on a monthly basis. The Box Tree was previously operated by chef Simon Gueller and his wife, Rena, from 2005 to late 2022. Under their management the restaurant has been redecorated, although elements from the original owners of the restaurant remain. Reception by food critics has improved over the years; the restaurant held a single Michelin star until 2019 and three AA rosettes. A sister company is also run by the chef, called Box Tree Events.

Set up by the brothers Michel and Albert Roux, and now run by their sons Alain Roux and Michel Roux Jr. It was first run in 1984 with Andrew Fairlie being named the first winner. It has since been run on an annual basis, with winners undertaking a three-month placement in a Michelin-starred restaurant.
Hibiscus was a London restaurant which was owned and run by French chef Claude Bosi. It was opened in 2000 in Ludlow, Shropshire, and won its first Michelin star within a year, and a second in the 2004 Guide. In July 2006, Bosi and his wife Claire announced that they were to sell the location in Ludlow and move closer to London. The property was sold to Alan Murchison, and Bosi purchased a new site on Maddox Street in London. The restaurant closed in 2016.

The Whitebrook, formerly known as The Crown at Whitebrook, is a restaurant with rooms in Whitebrook, 6 miles (9.7 km) south-south-east of Monmouth, Monmouthshire, Wales, near the River Wye and the border with England. The building is thought to date from the 17th century and by the 19th century it was used as a roadside inn. Its restaurant was run by Chef Patron James Sommerin until 2013; it gained a Michelin star in 2007. It contains eight double rooms and a 2-acre (0.81 ha) garden.

It was Atherton's first UK solo restaurant, and in 2011 was named the best new UK restaurant by the Good Food Guide, and the best new fine-dining restaurant in London by Time Out. It currently holds one Michelin star, which it gained within a year of opening. Elements in the restaurant such as the dessert bar have been subsequently included in Atherton's other restaurants. On 22 March 2024, Atherton announced on Instagram that the restaurant would be closing permanently on 31 July 2024.
Angela Hartnett at The Connaught, also known as MENU, was a restaurant owned by Gordon Ramsay Holdings and run by chef Angela Hartnett. It was located within The Connaught in Mayfair, London. The restaurant was opened following Ramsay's successful opening of Gordon Ramsay at Claridge's, within the Claridge's hotel, which is owned by the same equity group. Ramsay had originally been asked to move Restaurant Gordon Ramsay into the space, but suggested that Hartnett should run a new operation there instead. The restaurant was awarded a Michelin star in the 2004 guide and held it until it closed in 2007.
The Checkers, is a restaurant with rooms in Montgomery, Powys, Wales. Historically, the building was used as a coaching inn dating from the 17th century. Until the 2000s, it was used as a pub/hotel. It was converted into a French restaurant in 2012 and under chef Stephane Borie, it was awarded a Michelin star later that year. There are two main rooms in the restaurant, and three hotel rooms. It has received a mixed reception from critics, who have praised particular dishes but criticised the atmosphere. It serves both modern and classic French dishes, and in 2016, switched to only using set menus. In 2018, The Checkers moved away from their Michelin star and opened a breakfast and lunch restaurant renamed Checkers Pantry.
Restaurant Andrew Fairlie, also known as Andrew Fairlie at Gleneagles, is a restaurant serving British cuisine located within the Gleneagles Hotel near Auchterarder, Perth and Kinross, Scotland. In operation since 2001, it was run by chef Andrew Fairlie alongside his head chef Stephen McLaughlin who took over the kitchen after his death. It currently holds two Michelin stars, having been awarded them in 2006. It is the only restaurant in Scotland to hold two Michelin stars.
The Square was a London fine dining restaurant, opened on 13 December 1991 in St James's. Since its opening, it had been co-owned by chef Phil Howard and wine expert Nigel Platts-Martin. It also earned its first Michelin star in 1994 and retained it from then on. After relocating to Mayfair in February 1997, The Square won a second Michelin star in 1998, which it retained until 2016, the same year when Howard and Platts-Martin sold the restaurant to a company held by Marlon Abela. It regained its first Michelin star in 2017. It closed on 31 January 2020, causing the restaurant to lose its star the following year.
Tom Aikens, also named Tom Aitkens, is an English Michelin-starred chef. Aikens briefly worked for chefs in London and Paris restaurants. Under his tenure from 1996 to 1999 as head chef and then chef patron, Pied à Terre earned its two Michelin stars in January 1997.
