Martha Ortiz is a Mexican chef and owner of the restaurants Dulce Patria in the Las Alcobas hotel in Mexico City and Ella Canta within the InterContinental London Park Lane in London, England.

Career

Martha Ortiz was raised in Northern Mexico; her father was a doctor, and her mother an artist. Ortiz was inspired to become a chef at an early age, because of the dinner parties that her parents used to throw. [1] However, she studied political science at University. She then travelled to Hong Kong and Paris, France, where she worked in professional kitchens. It was then that she decided that she wanted to learn more about Mexican cuisine, and travelled around her home country learning recipes and techniques. Ortiz has since co-authored cookbooks with her mother, Martha Chapa, on regional Mexican cuisine. [2]

She opened her first restaurant, Águila y Sol, in Mexico City in 2003. Ortiz had a menu there which show flavours and styles from all over the country, such as mole sauce from Oaxaca and machaca from the north of the country. [1]

She was upset when she was forced to close the restaurant in 2008. [1] The local government had decided that the restaurant must be closed as it was a single parking space short of the required number. [2] The following year, she opened Dulce Patria within the boutique hotel Las Alcobas, also within Mexico City. It has since won several awards, [1] and as of 2017, is ranked number 48 in the list of Latin America's 50 Best Restaurants. [3]

In 2017, she opened a second location, within the InterContinental London Park Lane in London, England. [1] To ensure authenticity, the menu will include a number of ingredients imported from Mexico, and produces its own masa to make tortillas from. [2] Her main aim with the restaurant is to educate the British public about Mexican food, as she believes that it is currently muddled with Tex-Mex cuisine in the UK. [4]

Ortiz is a judge on the television cooking competition Top Chef Mexico . [2]

Family life

Between 2008 and 2014, she was married to Sergio Vela.

El Bajío is a group of eighteen restaurants in Mexico City which are run by Carmen Ramírez Degollado, noted for their colorful decoration and traditional cuisine from central Mexico which has received awards and praise from notable food experts. The restaurant business began in 1972 when Carmen's husband Raúl Ramírez Degollado bought a restaurant selling carnitas in the northwestern borough of Azcapotzalco. Four years later, Raúl died and Carmen took over the business, expanding the menu and adding waiters. The restaurant was so successful that she was able to send her five children to private university. In 2006, El Bajío opened a second location in the center of the city and since then has grown to eighteen locations which serve about 120,000 diners a month. Carmen has become a notable chef in her own right, giving classes and demonstrations in Mexico and abroad as well as writing about 20 books.

Carmen Ramírez Degollado is an internationally recognized expert on traditional Mexican food, head of the El Bajío restaurants located in Mexico City. She grew up in the rural area of Xalapa, Veracruz with no intentions of becoming a restaurateur. However, when her husband died in 1981, she took over the restaurant he founded and expanded it adding dishes from her native Veracruz and other Mexican states along with the carnitas and barbacoa that he made. Carmen’s international recognition began when she accompanied her daughter who went abroad to study to become a professional chef. This led to classes, consulting and participation in gastronomic events principally in the United States and Europe.
