Switchel, switzel, swizzle, switchy, ginger-water or haymaker's punch is a drink made of water mixed with vinegar, and often seasoned with ginger. It is usually sweetened with molasses, though honey, sugar, brown sugar, or maple syrup are sometimes used instead. [1] In the U.S. state of Vermont, oatmeal and lemon juice were sometimes added to the beverage.

Switchel debatably originated in the Caribbean, but New England also holds credit as the source, and it became a popular summer drink in the American Colonies in the late 17th century. By the 19th century, it had become a traditional drink to serve to thirsty farmers at hay harvest time, hence the nickname haymaker's punch. [2] Herman Melville wrote in I and My Chimney , "I will give a traveler a cup of switchel, if he want it; but am I bound to supply him with a sweet taste?" [3] In The Long Winter Laura Ingalls Wilder describes a switchel-like beverage that her mother had sent for Laura and her father to drink while haying: "Ma had sent them ginger-water. She had sweetened the cool well-water with sugar, flavored it with vinegar, and put in plenty of ginger to warm their stomachs so they could drink till they were not thirsty. Ginger-water would not make them sick, as plain cold water would when they were so hot."

The Vermont physician D. C. Jarvis recommended a similar drink (a mixture of honey and cider vinegar), which he called "honegar". [4]

Switchel is experiencing a renewed interest and has become a steadily-growing category in the ready-to-drink beverage industry. As of 2015, there are several companies that produce and distribute switchel beverages throughout the US. Canada has two commercial switchel producers.[ citation needed ]

Switchel was sometimes mixed with rum, especially at sea, [5] and it was served in the House of Representatives where it was "Flavored with the finest Jamaica rum." [6]

Sujeonggwa (Korean: 수정과) is a Korean traditional cinnamon punch. Dark reddish brown in color, it is made from mainly cinnamon, sugar, water and ginger. It's often served with gotgam and garnished with pine nuts. The punch is made by brewing first the cinnamon sticks and ginger at a slow boil. The solids are then removed for clarification and the remaining liquid is boiled again after adding either honey or brown sugar. The dried persimmons are cut into portions and are added to soak and soften after the brew has completely cooled. This is usually done several hours before serving, as extensive soaking of the fruit may thicken the clear liquid to a murky appearance.

Drink mixers are the non-alcoholic ingredients in mixed drinks and cocktails. Mixers dilute the drink, lowering the alcohol by volume in the drink. They change, enhance, or add new flavors to a drink. They may make the drink sweeter, more sour, or more savory. Some mixers change the texture or consistency of the drink, making it thicker or more watery. Drink mixers may also be used strictly for decorative purposes by changing the color or appearance of the drink. They also simply increase the volume of a drink, to make it last longer.

The Navy Grog was a popular rum-based drink served for many years at the Polynesian-themed Don the Beachcomber restaurants; it is still served in many so-called tiki restaurants and bars. First created by Donn Beach, who almost single-handedly originated the tiki cultural fad of the 1940s and 1950s, it was one of dozens of rum concoctions that he, and later Trader Vic and numerous other imitators, sold in exotic tropical settings. Not quite as potent as the Beachcomber's more famous Zombie, it was, nevertheless, shown on the menu as being limited to two, or sometimes three, to a customer. Reportedly, Phil Spector consumed at least two Trader Vic’s Navy Grogs at the Beverly Hilton restaurant, without eating any food, the night he later killed actress Lana Clarkson.
