The Black Swan is a 16th-century building at Oldstead in the southwest corner of the North York Moors National Park. The inn had been used for many years by travellers visiting nearby attractions such as Byland Abbey, the Kilburn White Horse and Shandy Hall. [2] In 1840, the licensed victualler was Ann Easton. [3]
In 2006, The Black Swan was bought by Tom and Anne Banks. [4] Their sons Tommy and James became involved in the running of the pub and restaurant, with Tommy working in the kitchen and James running the front of the house. [5] In 2010, The Black Swan won Two AA Rosettes [6] and was voted AA Pub of the Year in England. [7] [8]
In 2012, the restaurant won a Michelin Star with Adam Jackson as head chef. [9] When Jackson left to set up his own restaurant in June 2013, Tommy Banks took over as head chef. [7] The restaurant retained its Michelin Star and Banks, at the age of 24, became the youngest chef to hold a Michelin Star. [10] [11] In 2016, the restaurant was awarded Four Rosettes by the AA. [12] In 2017, TripAdvisor named it The Best Restaurant in the World based on customers' reviews, the first British restaurant to top their list since it began in 2012. [13]

The Box Tree is a restaurant located in Ilkley, West Yorkshire, England. It is owned by Yorkshire businessman Adam Frontal, who is operating the restaurant in the same capacity as previous owners, with an emphasis of remaining very current within the fine dining offering and experience. Current Executive Chef, Kieran Smith, has been leading the kitchen since 2020, growing its ever strong reputation and now currently offers a new tasting menu on a monthly basis. The Box Tree was previously operated by chef Simon Gueller and his wife, Rena, from 2005 to late 2022. Under their management the restaurant has been redecorated, although elements from the original owners of the restaurant remain. Reception by food critics has improved over the years; the restaurant held a single Michelin star until 2019 and three AA rosettes. A sister company is also run by the chef, called Box Tree Events.
L'Enclume is a restaurant opened in 2002 in Cartmel, Cumbria, England, run by chef Simon Rogan and his partner Penny Tapsell. L'Enclume received a rating of 10 out of 10 five times in the Good Food Guide and named their top restaurant for the fourth consecutive year in the 2017 guide, and placed second in the 2018 guide. It has received three Michelin stars and five AA Rosettes.

The pub has been in the village since the 19th century and the building dates back to the 14th century. It has been known for the quality of its food since the 1970s. The current owner is Andrew Pern who took over in 1996 originally with his then wife, Jacquie Pern. He has continued the tradition for quality food, gaining several awards. As of 2015, the restaurant holds one star in the Michelin Guide, an award it regained in 2014 having previously held it from 2002 to 2011.

Owned and operated by Tom Kerridge and his wife Beth Cullen-Kerridge, it gained its first Michelin star within a year of opening and a second in the 2012 list, making it the first pub to hold two Michelin stars. It was named the AA Restaurant of the Year for 2011–12.

Hibiscus was a London restaurant which was owned and run by French chef Claude Bosi. It was opened in 2000 in Ludlow, Shropshire, and won its first Michelin star within a year, and a second in the 2004 Guide. In July 2006, Bosi and his wife Claire announced that they were to sell the location in Ludlow and move closer to London. The property was sold to Alan Murchison, and Bosi purchased a new site on Maddox Street in London. The restaurant closed in 2016.
