Agrococcus casei is a Gram-positive bacterium from the genus Agrococcus which has been isolated from the surfaces of smear-ripened cheese. [1] [3] [2]
The Piophilidae are a family of "true flies", in the order Diptera. The so-called cheese flies are the best-known members, but most species of the Piophilidae are scavengers in animal products, carrion, and fungi. They may accordingly be important in forensic entomology and medical entomology. For a fly maggot, the larvae of many species have an unusually well-developed ability to leap when alarmed or when abandoning their larval food to pupate; they accordingly may be known as cheese skippers or other kinds of skippers according to their food source.

Milbenkäse, called Mellnkase in the local dialect and often known as Spinnenkäse, is a German speciality cheese. It is made by flavouring balls of quark with caraway and salt, allowing them to dry, and then leaving them in a wooden box containing rye flour and cheese mites for about three months. An enzyme in the digestive juices excreted by the mites causes the cheese to ripen. Milbenkäse tastes similar to Harzer cheese, but with a bitter note and a zesty aftertaste. Mites clinging to the cheese rind are consumed along with the cheese.
Gubbeen Cheese is a surface ripened, semi-soft, cow's milk cheese with a pink and white rind. The flavours are creamy with mushroom and nutty aftertastes but vary depending on maturity of cheese. Gubbeen Farmhouse Products also produce a Smoked Gubbeen.

Lacticaseibacillus caseiis an organism that belongs to the largest genus in the family Lactobacillaceae, a lactic acid bacteria (LAB), that was previously classified as Lactobacillus casei-01. This bacteria has been identified as facultatively anaerobic or microaerophilic, acid-tolerant, non-spore-forming bacteria. The taxonomy of this group has been debated for several years because researchers struggled to differentiate between the strains of L. casei and L. paracasei. It has recently been accepted as a single species with five subspecies: L. casei subsp. rhamnosus, L. casei subsp. alactosus, L. casei subsp. casei, L. casei subsp. tolerans, and L. casei subsp. pseudoplantarum. The taxonomy of this genus was determined according to the phenotypic, physiological, and biochemical similarities.
Tyrophagus casei, the cheese mite, is a species of mite which is inoculated into Milbenkäse and Altenburger Ziegenkäse cheese during their production. It is 0.45–0.70 millimetres (0.018–0.028 in) long, and feeds on cheese, corn, flour, old honeycombs, bird collections, and smoked meats.
Geotrichum candidum is a fungus which is a member of the human microbiome, notably associated with skin, sputum, and faeces where it occurs in 25–30% of specimens. It is common in soil and has been isolated from soil collected around the world, in all continents.
There are many different types of cheese. Cheeses can be grouped or classified according to criteria such as length of fermentation, texture, methods of production, fat content, animal milk, and country or region of origin. The method most commonly and traditionally used is based on moisture content, which is then further narrowed down by fat content and curing or ripening methods. The criteria may either be used singly or in combination, with no single method being universally used.
Cheese ripening, alternatively cheese maturation or affinage, is a process in cheesemaking. It is responsible for the distinct flavour of cheese, and through the modification of "ripening agents", determines the features that define many different varieties of cheeses, such as taste, texture, and body. The process is "characterized by a series of complex physical, chemical and microbiological changes" that incorporates the agents of "bacteria and enzymes of the milk, lactic culture, rennet, lipases, added moulds or yeasts, and environmental contaminants". The majority of cheese is ripened, except for fresh cheese.

Washed-rind or smear-ripened cheeses are cheeses which are periodically treated with brine or mold-bearing agents. This encourages the growth of certain bacteria on their surface which give them distinctive flavors. There are hard and soft washed-rind cheeses. The softer ones are sometimes distinguished as "smear-ripened". Conversely, the term "washed rind" is sometimes reserved only for the hard ones.

Cheese mites are mites that are used to produce such cheeses as Milbenkäse, Cantal and Mimolette. The action of the living mites on the surface of these cheeses contributes to the flavor and gives them a distinctive appearance. A 2010 scanning electron microscope study found that Milbenkäse cheese was produced using Tyrophagus casei mites, while Mimolette cheese used Acarus siro mites. Mimolette cheese, in particular, has live cheese mites in its rind which is thought to contribute to the cheese's distinct rind texture.
Bavariicoccus is a genus of bacteria of the phylum Bacillota. This genus contains a single species, Bavariicoccus seileri, strains of which were originally isolated from German soft cheese. Bacterial taxonomists have suggested that Bavariicoccus may be more appropriately placed within the family Carnobacteriaceae.
Vibrio casei is a Gram-negative species of bacterium in the genus Vibrio. Strains of this species were originally isolated from portions of French soft cheese. Genetically similar species and strains have been found in American cheesemaking plants.
Microbacterium gubbeenense is a Gram-positive, facultatively anaerobic, non-spore-forming and non-motile bacterium from the genus Microbacterium which has been isolated from the surface of a smear-ripened cheese in Ireland.
