The Hand & Flowers is a gastropub in Marlow, Buckinghamshire that opened in 2005. Owned and operated by Tom Kerridge and his wife Beth Cullen-Kerridge, it gained its first Michelin star within a year of opening and a second in the 2012 list, making it the first pub to hold two Michelin stars. It was named the AA Restaurant of the Year for 2011–12.

Description

The pub was purchased in 2005 by chef Tom Kerridge and his wife Beth, who ran the front of house. [1] [2] Located in Marlow, Buckinghamshire on West Street, only a few doors down from where Mary Shelley wrote Frankenstein . [3] The pub gained its first Michelin star, [2] and three AA Rosettes in under a year. [4]

At the AA Restaurant and Hotel Awards 2011–12 the pub was named the AA Restaurant of the Year for England. [5] The Hand and Flowers was upgraded to two Michelin stars in the 2012 list, the first time a pub has ever held two stars. [6] Michelin Guide editor Rebecca Burr said of The Hand & Flowers, "Tom’s cooking has risen to new heights. His dishes are sophisticated yet familiar and are a perfect match for the relaxed surroundings of his charming pub." [2]

After Kerridge appeared on the BBC television show the Great British Menu , he added his two winning dishes to the menu at The Hand & Flowers. [7] Another item on the menu is a hot chocolate tart with cacao from the estates of Willie Harcourt-Cooze. [7] Vegetarian dishes are usually created ad hoc as required, and rely on the invention of the chefs. [8]

The Hand & Flowers also has four suites for rent in two refurbished cottages. [4] Each suite has a separate entrance, and the suites are each decorated around a different centerpiece such as a copper bath or private terrace and hot tub. [9]

Andy Lewis' accident

On the 24th October 2018, Andy Lewis, a chef employed by The Hand & Flowers was severely injured after a pressurised stock boiler exploded, covering him in two hundred litres of boiling stock. [10]

Speaking exclusively to The Staff Canteen, Andy explained the extent of his injuries, his recovery, and the effects it had on his mental and physical health moving forwards. [11]

In the interview, Andy reiterated that despite being involved in the accident, it hadn't hindered his time at the restaurant, whilst crediting Tom Kerridge for supporting him and his family through his recovery. [12]

Andy spent 7 months recovering from the injuries. After returning back to the restaurant, he later left The Hand & Flowers to take up a head chef position at the Sir Charles Napier in Oxfordshire. [13]

Aubergine was a restaurant in Chelsea, London. Owned by A-Z Restaurants, it was opened under chef Gordon Ramsay in 1993. Aubergine was awarded two Michelin stars in 1997, which it held until Ramsay left the restaurant in July 1998 following the sacking of Marcus Wareing from sister restaurant L'Oranger. It subsequently reopened and held a single Michelin star under William Drabble until he left the restaurant in 2009. Aubergine closed in 2010, pending a relaunch as an informal Italian restaurant.

The Whitebrook, formerly known as The Crown at Whitebrook, is a restaurant with rooms in Whitebrook, 6 miles (9.7 km) south-south-east of Monmouth, Monmouthshire, Wales, near the River Wye and the border with England. The building is thought to date from the 17th century and by the 19th century it was used as a roadside inn. Its restaurant was run by Chef Patron James Sommerin until 2013; it gained a Michelin star in 2007. It contains eight double rooms and a 2-acre (0.81 ha) garden. On 7 March 2013, it closed because of financial difficulties; at the time it had the longest held Michelin star in Wales. Critics praised the food under Sommerin, but have criticised the difficulty in finding the restaurant. It re-opened in October 2013 under new chef and owner Chris Harrod, and regained the Michelin star in 2014. Harrod serves a menu using locally produced meat and vegetables along with foraged ingredients such as charlock, hedge bedstraw and pennywort.

Kenny Atkinson is an English chef, who won Michelin stars at the restaurants St Martin's on the Isle, and Kenny Atkinson at the White Room within Seaham Hall. He has appeared on the BBC show Great British Menu, where he has twice been selected as the chef for courses at the final banquets. He was named Chef of the Year at the 2009 Catey Awards. In 2015 he was awarded a Michelin star for his own restaurant House of Tides in Newcastle upon Tyne.

Tom Aikens, also named Tom Aitkens, is an English Michelin-starred chef. Aikens briefly worked for chefs in London and Paris restaurants. Under his tenure from 1996 to 1999 as head chef and then chef patron, Pied à Terre earned its two Michelin stars in January 1997.
