Berkswell is a hard cheese, made at Ram Hall Farm near Berkswell, West Midlands, England. It is made using unpasturised ewe milk and animal rennet. The moulds of cheeses are left in plastic kitchen colanders which give the cheese its distinctive shape. Berkswell may be compared to a mature pecorino. [1] [2] [3] [4]

In 2017, Berkswell won Supreme Champion at the Artisan Cheese Awards. [5]

Gloucester cheese Traditional English Cheese

Gloucester is a traditional, semi-hard cheese which has been made in Gloucestershire, England, since the 16th century. There are two varieties of the cheese, Single and Double; both are traditionally made from milk from Gloucester cattle. Both types have a natural rind and a hard texture, but Single Gloucester is more crumbly, lighter in texture and lower in fat. Double Gloucester is allowed to age for longer periods than Single, and it has a stronger and more savoury flavour. It is also slightly firmer. The flower known as Lady's Bedstraw, was responsible for the distinctively yellow colour of Double Gloucester Cheese.

Cooleeney Farm produces a number of cheeses from both cow's milk and goat's milk from their premises near Thurles in County Tipperary, Ireland.

After establishing a chain of delicatessens in central London during the 1970s, he migrated to Melbourne, Australia, in 1982, where he has done much to promote a greater understanding of specialist cheese as well as championing the cause of traditional cheese made from raw milk. Lincolnshire Poacher cheese English cows milk cheese

Lincolnshire Poacher is a hard unpasteurised cow's milk cheese that is generally of a cylindrical shape with a rind resembling granite in appearance. It is made at Ulceby Grange Farm, Alford, in Lincolnshire, England, by craft cheesemaker Richard Tagg. The cheese is matured for between 14 and 24 months, depending on when the milk was collected.

Fourme dAmbert

Fourme d'Ambert is a semi-hard French blue cheese. One of France's oldest cheeses, it dates from as far back as Roman times. It is made from raw cow's milk from the Auvergne region of France, with a distinct, narrow cylindrical shape.

Cheese Curdled milk food product

Cheese is a dairy product produced in wide ranges of flavors, textures and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. During production, the milk is usually acidified and the enzymes of either rennet or bacterial enzymes with similar activity are added to cause the casein to coagulate. The solid curds are then separated from the liquid whey and pressed into finished cheese. Some cheeses have aromatic molds on the rind, the outer layer, or throughout.

Beechers Handmade Cheese Artisan cheesemaker and retail shop

Beecher's Handmade Cheese is an artisan cheesemaker and retail shop with locations in the Pike Place Market, Seattle, Washington and New York City's Flatiron District. The company was founded by Kurt Beecher Dammeier in 2003 and opened in the Pike Place Market after Dammeier obtained a difficult to obtain storefront lease in the Market. Because Dammeier had never been a cheesemaker, he sought out the assistance of Brad Sinko, who helped run a family cheese-making business in Oregon. A second location was opened in 2011 in the Flatiron neighborhood of Manhattan in New York City.

Glyde Farm Produce Irish cheese company

Glyde Farm Produce was set up in 1996 by Peter Thomas who spent the next several years researching the market in Ireland for suitable dairy products. Peter and Anita Thomas started making Bellingham Blue cheese at their family farm at Mansfieldtown in County Louth, Ireland, in 2000.

Ardsallagh Goat Farm is located at Carrigtwohill, County Cork. Three types of cheese are made from their own herd and from locally sourced goat's milk. The cheeses are suitable for vegetarians.

Anne Therese Saxelby was an American artisanal cheesemaker and cheesemonger. She was the founder of Saxelby Cheesemongers, the first shop dedicated to American artisanal cheeses in New York City. She was a major figure in the growth and promotion of the American artisanal cheese industry.
