Bubbly Creek is the nickname given to the South Fork of the South Branch of the Chicago River. It runs entirely within the city of Chicago, Illinois, United States. It marks the boundary between the Bridgeport and McKinley Park community areas of the city. The creek derives its name from the gases bubbling out of the riverbed from the decomposition of blood and entrails dumped into the river in the early 20th century by the local meatpacking businesses surrounding the Union Stock Yards directly south of the creek's endpoint at Pershing Road. It was brought to notoriety by Upton Sinclair in his exposé on the American meat packing industry titled The Jungle . [1]
Bubbly Creek originates near 38th Street, at the Racine Avenue Pump Station of the Metropolitan Water Reclamation District of Greater Chicago. It flows in a generally northward direction for approximately 6,600 feet (2,000 m), and joins with the South Branch of the Chicago River. [2]
The area surrounding Bubbly Creek was originally a wetland; during the 19th century, channels were dredged to increase the rate of flow into the Chicago River and dry out the area to increase the amount of habitable land in the fast-growing city. The South Fork became an open sewer for the local stockyards, especially the Union Stock Yards. Meatpackers dumped waste, such as blood and entrails, into the nearest river. [3] The creek received so much blood and offal that it began to bubble methane and hydrogen sulfide gas from the products of decomposition. [1]
In 1906, author Upton Sinclair wrote The Jungle, a portrait of America's meat packing industry. In it, he reported on the state of Bubbly Creek, writing that:
"Bubbly Creek" is an arm of the Chicago River, and forms the southern boundary of the Union Stock Yards; all the drainage of the square mile of packing-houses empties into it so that it is really a great open sewer a hundred or two feet wide. One long arm of it is blind, and the filth stays there forever and a day. The grease and chemicals that are poured into it undergo all sorts of strange transformations, which are the cause of its name; it is constantly in motion as if huge fish were feeding in it, or great leviathans disporting themselves in its depths. Bubbles of carbonic gas will rise to the surface and burst, and make rings two or three feet wide. Here and there the grease and filth have caked solid, and the creek looks like a bed of lava; chickens walk about on it, feeding, and many times an unwary stranger has started to stroll across and vanished temporarily. The packers used to leave the creek that way, till every now and then the surface would catch on fire and burn furiously, and the fire department would have to come and put it out. Once, however, an ingenious stranger came and started to gather this filth in scows, to make lard out of; then the packers took the cue, and got out an injunction to stop him, and afterwards gathered it themselves. The banks of "Bubbly Creek" are plastered thick with hairs, and this also the packers gather and clean.
Two heavily polluted streams that joined to create the South Fork were later filled in, but their courses can still be seen today in the configuration of streets and railroad tracks in the area.
The area has been increasingly occupied by residential development such as Bridgeport Village; a program to oxygenate the creek by continuously injecting compressed air into the water has met with limited success, although the creek's odor has been much reduced.
Some fish and vegetation have returned in recent decades. [4]
Areas near the creek have been designated for recreational uses including parks, and developers and the city agreed on a 60-foot (18 m) setback to allow for remediation. [5] However, during heavy rains, millions of gallons of wastewater continue to be dumped into the stagnant creek by the Metropolitan Water Reclamation District of Greater Chicago. [4]
As of 2007 [update] , the City of Chicago and the Army Corps of Engineers were considering a $2.65 million feasibility study to look at restoration options, which would have implications for the remainder of the Chicago River system due to the unusual challenges of Bubbly Creek. The creek's waters are largely stagnant, having little gravitational flow; the study investigated several possibilities, including a meandering stream amid a wetland, to restore an oxygenated system. [5] The U.S. Army Corps of Engineers had proposed restoring about 44 acres (18 ha) of water and surrounding land, in part by covering the creek bottom with 6 inches (15 cm) of sand and 6 inches (15 cm) of rocks. The actual renovation project was expected to cost $15.4 million. In 2015, the project was stalled, due to contamination discovered in the creek's sediments. [6]
A private society has opened the Chicago Maritime Museum, a museum and memorialization of Chicago's river and maritime heritage, on 35th Street adjacent to Bubbly Creek.
Upton Beall Sinclair Jr. was an American author, muckraker, and political activist, and the 1934 Democratic Party nominee for governor of California. He wrote nearly 100 books and other works in several genres. Sinclair's work was well known and popular in the first half of the 20th century, and he won the Pulitzer Prize for Fiction in 1943.
The Jungle is a novel by American muckraker author Upton Sinclair, known for his efforts to expose corruption in government and business in the early 20th century. In 1904, Sinclair spent seven weeks gathering information while working incognito in the meatpacking plants of the Chicago stockyards for the socialist newspaper Appeal to Reason, which published the novel in serial form in 1905. The novel was later published in book format by Doubleday in 1906.
Philip Danforth Armour Sr. was an American meatpacking industrialist who founded the Chicago-based firm of Armour & Company. Born on a farm in upstate New York, he initially gained financial success when he made $8,000 during the California gold rush from 1852 to 1856. He later opened a wholesale soap business in Cincinnati, then moved it to Milwaukee.
The Salmon River, also known as "The River of No Return", is a river located in the U.S. state of Idaho in the western United States. It flows for 425 miles (685 km) through central Idaho, draining a rugged, thinly populated watershed of 14,000 square miles (36,000 km2). The river drops more than 7,000 feet (2,100 m) from its headwaters, near Galena Summit above the Sawtooth Valley in the Sawtooth National Recreation Area, to its confluence with the Snake River. Measured at White Bird, its average discharge is 11,060 cubic feet per second. The Salmon River is the longest undammed river in the contiguous United States.
The Current River forms in the southeastern portion of the Ozarks of Missouri and becomes a 7th order stream as it flows southeasterly out of the Ozarks into northeastern Arkansas where it becomes a tributary of the Black River, which is a tributary of the White River, a tributary of the Mississippi River. The Current River is approximately 184 miles (296 km) long and drains about 2,641 square miles (6,840 km2) of land mostly in Missouri and a small portion of land in northeastern Arkansas. The headwaters of the Current River are nearly 900 feet (270 m) above sea level, while the mouth of the river lies around 280 feet (85 m) above sea level. The basin drains a rural area that is dominated by karst topography, underlain by dolomite and sandstone bedrock with a small area of igneous rock southeast of Eminence, Missouri. The annual daily mean discharge of the river near Doniphan, Missouri is 2,815 cubic feet (79.7 m3) per second. In 1964, over 134 mi (160 km) of the upper course of the river and its tributaries were federally protected as the Ozark National Scenic Riverways, the first national park in America to protect a river system.
The Elk River is in southwestern Oregon in the United States. About 29 miles (47 km) long, the river drains a remote 92-square-mile (240 km2) area of the Coast Range into the Pacific Ocean.
The Big River is a tributary of the Coast Fork Willamette River, approximately 12 miles (19 km) long, in western Oregon in the United States. It drains an area of the Calapooya Mountains south of Eugene.
The Trask River is in northwestern Oregon in the United States. It drains a mountainous timber-producing area of the Northern Oregon Coast Range west of Portland into Tillamook Bay and the Pacific Ocean. It is one of five rivers—the Tillamook, the Trask, the Wilson, the Kilchis, and the Miami—that flow into the bay.
Rendering is a process that converts waste animal tissue into stable, usable materials. Rendering can refer to any processing of animal products into more useful materials, or, more narrowly, to the rendering of whole animal fatty tissue into purified fats like lard or tallow. Rendering can be carried out on an industrial, farm, or kitchen scale. It can also be applied to non-animal products that are rendered down to pulp. The rendering process simultaneously dries the material and separates the fat from the bone and protein, yielding a fat commodity and a protein meal.
The meat-packing industry handles the slaughtering, processing, packaging, and distribution of meat from animals such as cattle, pigs, sheep and other livestock. Poultry is generally not included. This greater part of the entire meat industry is primarily focused on producing meat for human consumption, but it also yields a variety of by-products including hides, dried blood, protein meals such as meat & bone meal, and, through the process of rendering, fats.
Jonathan Ogden Armour was an American meatpacking magnate and only surviving son of Civil War–era industrialist Philip Danforth Armour. He became owner and president of Armour & Company upon the death of his father in 1901. During his tenure as president, Armour and Co. expanded nationwide and overseas, growing from a mid-sized regional meatpacker to the largest food products company in the United States.
McKinley Park, one of the 77 official community areas of Chicago, Illinois, is located on the city's southwest side.
The Union Stock Yard & Transit Co., or The Yards, was the meatpacking district in Chicago for more than a century, starting in 1865. The district was operated by a group of railroad companies that acquired marshland and turned it into a centralized processing area. By the 1890s, the railroad capital behind the Union Stockyards was Vanderbilt money. The Union Stockyards operated in the New City community area for 106 years, helping Chicago become known as the "hog butcher for the world", the center of the American meatpacking industry for decades. The yards became inspiration for literature and social reform.
The Amalgamated Meat Cutters (AMC), officially the Amalgamated Meat Cutters and Butcher Workmen of North America, 1897–1979, was a labor union that represented retail and packinghouse workers. In 1979, the AMCBW merged with the Retail Clerks International Union to form the United Food and Commercial Workers (UFCW)
Linganore Creek is a 13.5-mile-long (21.7 km) tributary of the Monocacy River in Frederick County, Maryland. The stream is formed from the confluence of the north and south forks of the Linganore, about 10 miles (16 km) east-northeast of the city of Frederick. The creek runs roughly southwest to the Monocacy River, which drains to the Potomac River. The watershed area of the creek is 83.1 square miles (215 km2). High water in the creek can result in flooding of Gas House Pike, an east–west road running between Monocacy Boulevard and Green Valley Road.
Swift & Co. v. United States, 196 U.S. 375 (1905), was a case in which the United States Supreme Court ruled that the Commerce Clause allowed the federal government to regulate monopolies if it has a direct effect on commerce. It marked the success of the Presidency of Theodore Roosevelt in destroying the "Beef Trust". This case established a "stream of commerce" argument that allows Congress to regulate things that fall into either category. In particular it allowed Congress to regulate the Chicago slaughterhouse industry. Even though the slaughterhouse supposedly dealt with only intrastate matters, the butchering of meat was merely a "station" along the way between cow and meat. Thus, as it was part of the greater meat industry that was between the several states, Congress can regulate it. The Court's decision halted price fixing by Swift & Company and its allies.
The South Fork Eel River is the largest tributary of the Eel River in north-central California in the United States. The river flows 105 miles (169 km) north from Laytonville to Dyerville/Founders' Grove where it joins the Eel River. The South Fork drains a long and narrow portion of the Coast Range of California in parts of Mendocino and Humboldt counties. U.S. Route 101 follows the river for much of its length.
McWay Creek is a 2.5-mile-long (4.0 km) coastal stream in Monterey County in the U.S. state of California. It flows steeply west and south from McWay Canyon, high in California's Central Coast Range, and spills into the Pacific Ocean at Waterfall Cove after flowing over scenic McWay Falls. Most of the creek and its watershed are contained within Julia Pfeiffer Burns State Park, 12 miles (19 km) south of Pfeiffer Big Sur State Park. The creek is named after Christopher McWay from New York, a pioneer who homesteaded the property.
Labor rights in the American meatpacking industry are largely regulated by the National Labor Relations Board (NLRB), which regulates union organization. The Occupational Safety and Health Administration regulates the safety and health conditions applicable to workers in the American meat packing industry. According to scholars of the American meat packing industry, despite federal regulation through OSHA and industry oversight, workers in meat production plants have little agency and inadequate protections. Workers in the industry perform difficult jobs in dangerous conditions, and are at significant risk for physical and psychological harm. In addition to high rates of injury, workers are at risk of losing their jobs when they are injured or for attempting to organize and bargain collectively. Several studies of the industry have found immigrant workers—"an increasing percentage of the workforce in the industry."
