Aporreadillo or aporreado is a typical dish from southwestern Mexican cuisine.

This dish consists of meat beaten with a stone, salted, shredded, stirred with egg and cooked in guajillo chili, árbol chili or serrano chili sauce, with garlic and cilantro. It can be made of beef or venison meat, dried and salted, or cecina. It is accompanied with rice and beans for breakfast or dinner. The aporreadillo can be red or green, depending on the color of the sauce. It is traditional in the states of Guerrero and Michoacán.

Cuerito is pig skin from Mexican cuisine, Venezuelan cuisine and Spanish cuisine. Cuero is the Spanish-language word for skin, leather or hide, so cueritos means "little skins". They are usually pickled in vinegar and can be made with a spicy sauce. The vinegar can be seasoned with pineapple, dulce macho (piloncillo), cloves, peppercorns, chile de árbol and oregano. There are also family recipes.

Saramură is a Romanian "sauce" for marinating. It can be found in nature: water containing salt; salt water spring or it can be homemade by boiling water with salt and other ingredients. Ocopa is a smooth sauce flavored with black mint huacatay, originally from the city of Arequipa, Peru. It may be served hot, as dressing for boiled potatoes, or used as a garnish for cold hard-boiled eggs. Ocopa is prepared with sun-dried yellow chilis and sautéed onions, garlic, and thickened with crackers and roasted peanuts.

Clemole or tlemole is a traditional dish in Mexican cuisine. It is a soup where meat, vegetables and strong flavor elements are combined. When beef or poultry meat is fried and boiled in a stock pot, then green beans, corn chunks and zucchini pieces are added. Chili peppers are roasted, soaked in hot water and ground on a metate with a little garlic, cloves and black pepper. This is fried in oil or lard with a few onion slices, making a sauce that is added to the broth, which should not be too thick.

<span class="mw-page-title-main">Encacahuatado</span> Mexican dish with meat and peanuts

Encacahuatado is a typical Mexican dish that consists of a thick peanut sauce with tomato, dried chili, sesame seeds ground and roasted together. The sauce is then stewed with meat such as chicken, pork or beef.
