Yersinia is a genus of bacteria in the family Yersiniaceae. Yersinia species are Gram-negative, coccobacilli bacteria, a few micrometers long and fractions of a micrometer in diameter, and are facultative anaerobes. Some members of Yersinia are pathogenic in humans; in particular, Y. pestis is the causative agent of the plague. Rodents are the natural reservoirs of Yersinia; less frequently, other mammals serve as the host. Infection may occur either through blood or in an alimentary fashion, occasionally via consumption of food products contaminated with infected urine or feces.
Acidobacteriota is a phylum of Gram-negative bacteria. Its members are physiologically diverse and ubiquitous, especially in soils, but are under-represented in culture.
Listeria is a genus of bacteria that acts as an intracellular parasite in mammals. Until 1992, 10 species were known, each containing two subspecies. By 2020, 21 species had been identified. The genus is named in honour of the British pioneer of sterile surgery Joseph Lister. Listeria species are Gram-positive, rod-shaped, and facultatively anaerobic, and do not produce endospores. The major human pathogen in the genus Listeria is L. monocytogenes. It is usually the causative agent of the relatively rare bacterial disease listeriosis, an infection caused by eating food contaminated with the bacteria. Listeriosis can cause serious illness in pregnant women, newborns, adults with weakened immune systems and the elderly, and may cause gastroenteritis in others who have been severely infected.
Torulaspora delbrueckii is a ubiquitous yeast species with both wild and anthropic habitats. The type strain of T. delbrueckii is CBS 1146T, equivalent to CLIB 230 or ATCC 10662, etc.. The type strain of T. delbrueckii CBS 1146 T was sequenced in 2009, and is composed of 8 chromosomes in addition to a mitochondrial genome.
Chlamydia pecorum, also known as Chlamydophila pecorum is a species of Chlamydiaceae that originated from ruminants, such as cattle, sheep and goats. It has also infected koalas and swine. C. pecorum strains are serologically and pathogenically diverse.
Cronobacter is a genus of Gram-negative, facultatively anaerobic, oxidase-negative, catalase-positive, rod-shaped bacteria of the family Enterobacteriaceae. Several Cronobacter species are desiccation resistant and persistent in dry products such as powdered infant formula. They are generally motile, reduce nitrate, use citrate, hydrolyze esculin and arginine, and are positive for L-ornithine decarboxylation. Acid is produced from D-glucose, D-sucrose, D-raffinose, D-melibiose, D-cellobiose, D-mannitol, D-mannose, L-rhamnose, L-arabinose, D-trehalose, galacturonate and D-maltose. Cronobacter spp. are also generally positive for acetoin production and negative for the methyl red test, indicating 2,3-butanediol rather than mixed acid fermentation. The type species of the genus Cronobacter is Cronobacter sakazakii comb. nov.
Kefir is a fermented milk drink similar to a thin yogurt or ayran that is made from kefir grains, a specific type of mesophilic symbiotic culture. It is prepared by inoculating the milk of cows, goats, or sheep with kefir grains.
Arcobacter is a genus of Gram-negative, spiral-shaped bacteria in the phylum Campylobacterota. It shows an unusually wide range of habitats, and some species can be human and animal pathogens. Species of the genus Arcobacter are found in both animal and environmental sources, making it unique among the Campylobacterota. This genus currently consists of five species: A. butzleri, A. cryaerophilus, A. skirrowii, A. nitrofigilis, and A. sulfidicus, although several other potential novel species have recently been described from varying environments. Three of these five known species are pathogenic. Members of this genus were first isolated in 1977 from aborted bovine fetuses. They are aerotolerant, Campylobacter-like organisms, previously classified as Campylobacter. The genus Arcobacter, in fact, was created as recently as 1992. Although they are similar to this other genus, Arcobacter species can grow at lower temperatures than Campylobacter, as well as in the air, which Campylobacter cannot.
Streptomyces reticuliscabiei is a streptomycete bacterium species that is associated with netted scab in potatoes. Its type strain is CFBP 4517T. It is considered to be part of a cluster together with S. turgidiscabies, however they cause different diseases, the former involved in common scab.
Borrelia lusitaniae is a bacterium of the spirochete class of the genus Borrelia, which has a diderm (double-membrane) envelope. It is a part of the Borrelia burgdorferisensu lato genospecies and is a Gram-negative bacterium. B. lusitaniae is tick-borne; he type strain is PotiB2. It can be pathogenic, being involved in cases of Lyme borreliosis. A species of tick, Ixodes ricinus, is the host of B. lusitaniae. It is thought to have originated from Portugal and has since spread to parts of Europe and North Africa. Lizards of the family Lacertidae are now believed to be important reservoir hosts of this bacterium.

Arcobacter aquimarinus is a species of bacteria first recovered from mussels, with type strain W63T.
Kazachstania humilis is a species of yeast in the genus Kazachstania. It commonly occurs in sourdough and kefir cultures, along with different species of lactic acid bacteria. K. humilis is the most representative yeast species found in type I sourdough ecosystems. The effects of electric field strength, pulse width and frequency, or pulse shape is significant on the membranes of Candida humilis, but not very noticeable.
