Brewing is the production of beer by steeping a starch source in water and fermenting the resulting sweet liquid with yeast. It may be done in a brewery by a commercial brewer, at home by a homebrewer, or communally. Brewing has taken place since around the 6th millennium BC, and archaeological evidence suggests that emerging civilizations, including ancient Egypt and Mesopotamia, brewed beer. Since the nineteenth century the brewing industry has been part of most western economies.

Plzeňský Prazdroj, a. s., known in English as the Pilsner Urquell Brewery, is a Czech brewery opened in 1842 and headquartered in Plzeň, Czech Republic. It was the first brewery to produce pale lager, branded as Pilsner Urquell, which became so popular and was so much copied that more than two-thirds of the beer produced in the world today is pale lager, sometimes named pils, pilsner and pilsener after Pilsner Urquell. The brewery name, Pilsner Urquell, which can be roughly translated into English as "the original source at Pilsen", was adopted as a trademark in 1898. Pilsner Urquell is the largest producer and exporter of beer in the Czech Republic.

Wellington Brewery is a brewery in Guelph, Ontario, Canada. It was established in 1985 and was one of the first North American breweries to revive the ancient technique of brewing cask-conditioned cask ale. Phil Gosling was the founder. By 2011, the volume of sales required the company to expand its brewing capacity. Two new 150HL tanks were installed. In January 2013, four more tanks were installed to keep up with demand for Wellington products. In 2015, the company's facility was expanded with a 12,000-square-foot addition, including a 40-hectolitre brew house and new packaging line. At that time, the company employed a staff of 45. The company also has a distribution warehouse in Toronto.
The International Brewing Awards, previously known as the Brewing Industry International Awards (BIIA), is a biannual brewing competition with its origins dating to 1886. It is believed to be the oldest international brewing competition in the world. The Awards are owned and organised by Brewing Technology Services Ltd (BTS). Only beers that pay to enter are judged.
The Malt Shovel Brewery is an Australian brewery owned by Lion, a subsidiary of the Japanese conglomerate Kirin. It is located in Camperdown, New South Wales. Malt Shovel is best known for its James Squire range of beers. The beer is named after the convict turned Australia's first brewer James Squire, who also went on to grow Australia's first hops and is said to have created Australia's first commercial brewery.
The Galway Hooker Brewery is based in Oranmore, County Galway, Ireland. The brewery was founded in 2006 by two cousins, Aidan Murphy and Ronan Brennan, and the name of the brewery and its first beer were decided by an online competition to choose a name.

The term "lager" comes from the German for "storage", as the beer was stored before drinking, traditionally in the same cool caves in which it was fermented.

Porter is a style of beer that was developed in London, England in the early 18th century. It was well-hopped and dark in appearance owing to the use of brown malt. The name is believed to have originated from its popularity with porters.
