Roasting is a cooking method that uses dry heat where hot air covers the food, cooking it evenly on all sides with temperatures of at least 150 °C (300 °F) from an open flame, oven, or other heat source. Roasting can enhance the flavor through caramelization and Maillard browning on the surface of the food. Roasting uses indirect, diffused heat, and is suitable for slower cooking of meat in a larger, whole piece. Meats and most root and bulb vegetables can be roasted. Any piece of meat, especially red meat, that has been cooked in this fashion is called a roast. Meats and vegetables prepared in this way are described as "roasted", e.g., roasted chicken or roasted squash.

Gourds include the fruits of some flowering plant species in the family Cucurbitaceae, particularly Cucurbita and Lagenaria. The term refers to a number of species and subspecies, many with hard shells, and some without. Many gourds have large, bulbous bodies and long necks, such as Dipper Gourds, many variations of Bottle Gourd and caveman club gourds. One of the earliest domesticated types of plants, subspecies of the bottle gourd, Lagenaria siceraria, have been discovered in archaeological sites dating from as early as 13,000 BC. Gourds have had numerous uses throughout history, including as tools, musical instruments, objects of art, film, and food.

Cucurbita is a genus of herbaceous fruits in the gourd family, Cucurbitaceae, native to the Andes and Mesoamerica. Five edible species are grown and consumed for their flesh and seeds. They are variously known as squash, pumpkin, or gourd, depending on species, variety, and local parlance. Other kinds of gourd, also called bottle-gourds, are native to Africa and belong to the genus Lagenaria, which is in the same family and subfamily as Cucurbita, but in a different tribe, their young fruits are eaten much like those of the Cucurbita species.

Agriculture in Mesoamerica dates to the Archaic period of Mesoamerican chronology. At the beginning of the Archaic period, the Early Hunters of the late Pleistocene era led nomadic lifestyles, relying on hunting and gathering for sustenance. However, the nomadic lifestyle that dominated the late Pleistocene and the early Archaic slowly transitioned into a more sedentary lifestyle as the hunter gatherer micro-bands in the region began to cultivate wild plants. The cultivation of these plants provided security to the Mesoamericans, allowing them to increase surplus of "starvation foods" near seasonal camps; this surplus could be utilized when hunting was bad, during times of drought, and when resources were low. The cultivation of plants could have been started purposefully, or by accident. The former could have been done by bringing a wild plant closer to a camp site, or to a frequented area, so it was easier access and collect. The latter could have happened as certain plant seeds were eaten and not fully digested, causing these plants to grow wherever human habitation would take them.

It can be either harvested young to be consumed as a vegetable, or harvested mature to be dried and used as a utensil, container, or a musical instrument. When it is fresh, the fruit has a light green smooth skin and white flesh.

A marrow is the mature fruit of certain Cucurbita pepo cultivars used as a vegetable. The immature fruit of the same or similar cultivars is called courgette or zucchini. Like courgettes, marrows are oblong, green squash, but marrows have a firm rind and a neutral flavour, making them useful as edible casings for mincemeat and other stuffings. They can be stored for several weeks after harvest, to be processed for food when required. They are a vegetable used in Great Britain and areas with significant British influence, though their popularity is waning in favor of immature summer squash like courgette.

Cucurbita ficifolia is a species of squash, grown for its edible seeds, fruit, and greens. It has common names including black seed squash, chilacayote, cidra, fig-leaf gourd, and Malabar gourd. Compared to other domesticated species in its genus, investigators have noted that samples of C. ficifolia from throughout its range are relatively similar to one other in morphology and genetic composition. Variations do occur in fruit and seed color, some isozymes, and photoperiod sensitivity.

<i>Cucurbita moschata</i> Species of flowering plant

Cucurbita moschata is a species originating in either Central America or northern South America. It includes cultivars known as squash or pumpkin. C. moschata cultivars are generally more tolerant of hot, humid weather than cultivars of C. maxima or C. pepo. They also generally display a greater resistance to disease and insects, especially to the squash vine borer. Commercially made pumpkin pie mix is most often made from varieties of C. moschata. The ancestral species of the genus Cucurbita were present in the Americas before the arrival of humans. No species within the genus is fully genetically isolated from all the other species. C. moschata can be hybridized with all other species. It has been suggested that this shows that the species of Cucurbita have diversified more recently than those of related genera such as Cucumis and Citrullus.

Its name reflects the traditional focus on root crops stored in an underground cellar, which is still often true; but the scope is wider, as a wide variety of foods can be stored for weeks to months, depending on the crop and conditions, and the structure may not always be underground.

<i>Cucurbita maxima</i> Species of squash

Cucurbita maxima, one of at least five species of cultivated squash, is one of the most diverse domesticated species. This species originated in South America from the wild subspecies Cucurbita maxima subsp. andreana over 4,000 years ago. Cucurbita maxima, known for modern varieties as Hubbard, Delicious, Marblehead, Boston Marrow, and Turks Turban, originated in northern Argentina near the Andes or in certain Andean valleys. Secondary centers of diversity include India, Bangladesh, Myanmar, and the southern Appalachians.

Diabrotica speciosa, also known as the cucurbit beetle and in Spanish as vaquita de San Antonio is an insect pest native to South America. Its larvae feed on the roots of crops. The cucurbit beetle is also known to transmit several viruses such as comoviruses and different mosaic viruses. This is native to South America and is now distributed in Central America and other global areas.
