Newport 1665

Last updated

Newport 1665 is an artisan, unpasteurised cow's milk cheese from Mr Moyden's Grove Farm at Newport, Shropshire. Named after the great fire of Newport which destroyed most of the medieval town, it is a smoked version of Newport cheese. The milk is from British Friesian cows. [1]

Raw milk or unpasteurized milk is milk that has not been pasteurized, a process of heating liquid foods to decontaminate them for safe drinking. Proponents of raw milk have stated that there are benefits to its consumption, including better flavor, better nutrition, and the building of a healthy immune system. However, the medical community has warned of the dangers, which include a risk of infection, and has not found any clear benefit. The availability and regulation of raw milk vary around the world. In the US, some dairies have adopted low-temperature vat pasteurization, which they say produces a product similar to raw milk.

Cheese generic term for a diverse group of milk-based food products

Cheese is a dairy product derived from milk that is produced in a wide range of flavors, textures, and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. During production, the milk is usually acidified, and adding the enzyme rennet causes coagulation. The solids are separated and pressed into final form. Some cheeses have molds on the rind, the outer layer, or throughout. Most cheeses melt at cooking temperature.

Newport, Shropshire market town in the borough of Telford and Wrekin and ceremonial county of Shropshire, England

Newport is a market town in the borough of Telford and Wrekin and ceremonial county of Shropshire, England. It lies some 6 miles north of Telford and some 12 mi (19 km) west of Stafford, and is near the Shropshire/Staffordshire border. The 2001 census recorded 10,814 people living in the town's parish, making it the second-largest town in Telford and Wrekin and the fifth-largest in the ceremonial county of Shropshire. By the 2011 census, the population had risen to 11,387.

Wheels of Newport cheese are smoked whole over oak chips at nearby Bings Heath Smokery. This results in a chocolate-coloured rind and a creamy, flaky interior. It has a flavour of melted butter and a mild smoky aftertaste.

Newport 1665 won a Silver Medal at the World Cheese Awards 2007. [1]
