Old World wine refers primarily to wine made in Europe but can also include other regions of the Mediterranean basin with long histories of winemaking such as North Africa and the Near East. The phrase is often used in contrast to "New World wine" which refers primarily to wines from New World wine regions such as Japan, the United States, Canada, Mexico, Australia, New Zealand, Brazil, Argentina, Chile and South Africa. The term "Old World wine" does not refer to a homogeneous style with "Old World wine regions" like Austria, Denmark, Finland, France, Georgia, Germany, Ireland, Israel, Italy, the Netherlands, Norway, Poland, Portugal, Spain and Switzerland each making vastly different styles of wine even within their own borders. Rather, the term is used to describe general differences in viticulture and winemaking philosophies between the Old World regions where tradition and the role of terroir lead versus the New World where science and the role of the winemaker are more often emphasized. In recent times, the globalization of wine and advent of flying winemakers have lessened the distinction between the two terms with winemakers in one region being able to produce wines that can display the traits of the other region—i.e. an "Old World style" wine being produced in a New World wine region like California or Chile and vice versa. "Old World" can also mean a wine style made for centuries by small winemakers intended to be consumed as a daily beverage to accompany a meal. These food and wine "pairings," so famous today (e.g. Chianti and Italian food) developed over generations by trial and error. The small village winemaker succeeded or failed on his wine's reputation as an acceptable "table" wine, be it highly expensive or budget priced.[ citation needed ]
By comparison, "New World" wines, while also being food friendly, are created to meet the tastes of contemporary wine drinkers. Contemporary wine drinkers, especially those in the large U.S. market, consume wine as a stand-alone beverage as much as a beverage to accompany a meal. Thus, the immediate "taste" is the overwhelming criteria by which a new-world wine is judged by the contemporary wine consumer.
The two most guiding influences of Old World style winemaking are that of tradition and terroir. The former refers to the long history of a wine region, while the latter refers to geography and the unique characteristics of a place. The centuries-old histories of many Old World wine regions have given the regions time to develop and adapt techniques that presumably best suit a particular vine growing area. These can include which grape varieties to plant, trellising methods, maximum permitted yields, as well as winemaking techniques. Over time, these traditional practices became enshrined in local regulations such as the French Appellation d'origine contrôlée (AOC), Italian Denominazione di origine controllata (DOC), Spanish Denominación de Origen (DO) and Portuguese Denominação de Origem Controlada (DOC) laws. Terroir is often used to describe the aspects of a wine region such as soil, climate and topography that are often out of the winemaker's control. [3] They are the unique attributes that, theoretically, make a Sangiovese based wine from Chianti taste different from a Sangiovese-based wine made anywhere else in the world even if exactly the same winemaking techniques are used. While wines in the New World are often labeled based on the varietal (such as Chardonnay or Tempranillo), wines in the Old World are generally labeled based on the region or place that they come from (such as Montrachet or Ribera del Duero). This is because Old World winemakers believe that the unique terroir-driven characteristics of where a wine comes from plays a more distinct role in shaping the resulting wine than the grape variety itself. Viticulture in most of the Old World wine regions dates back to several hundred or even thousands of years with the Phoenicians, Greeks, Thracians and Romans establishing some of the earliest vineyards. Over centuries, these Old World wine regions have developed viticultural techniques and practices adapted around their unique climates and landscapes. Many of these practices are enshrined in local wine laws and regulations such as the French Appellation d'origine contrôlée (AOC) regulations. One distinction between an Old World vineyard and a New World vineyard is generally the high vine density and close proximity of plantings in the Old World, which were often planted years before the use of mechanical agriculture became popular. In regions such as Bordeaux, vines were often planted 1 metre (3 ft) apart in rows that were also separated by 1 metre (3 ft) with spacing that was sufficient for pruning and harvesting being done manually. In New World wine regions like Australia, which was quick to adopt mechanical techniques, vines were often planted apart 3.7 metres (12 ft) by 2.5 metres (8 ft). While spacing between vine rows has shrunk in many Old World wine regions began adopting mechanical techniques in the late 20th century, some regions are still characterized by the high density of vines in their vineyards. One of these exceptions to the Mediterranean origins of Viticultural tradition is in Hungary, whose knowledge of Winemaking came with them from Central Asia. [5] Evidence for this is found in the writings of Ibn Rustah as well as the Hungarian word for wine (bor). [6] Which is unique in Europe because of its origins in Middle Persian (transported via Turkic) as opposed to the Sanskrit word vena that most other European words for wine descend from. [5]
Old World winemaking is often terroir driven with emphasis being placed on how well the wine communicates the sense of place where it originated. For example, a winemaker making a Riesling from the Mosel will often try to highlight the unique traits of the Mosel wine region (such as its slate soils) with the wine expressing those traits in the form of minerality. In the New World, emphasis is often placed on the winemaker and the techniques used to bring out the fruit flavors of a wine (a style known as "fruit driven"). New World winemakers tend to be more open to experimenting with new scientific advances (such as the use of enzymes as an additive) while the terroir influence of Old World winemakers will often attempt to downplay the role of the winemaker and avoid techniques that may mask or distort the expression of terroir. Old World winemakers tend to be more open to use of wild, ambient yeast during the fermentation process as a part of the terroir while New World winemakers tend to favor cultured yeast strains. [4]
Other techniques associated with Old World winemakers include higher fermentation temperatures and a period of extended maceration following fermentation where the wine can leech more phenolic compounds from the grape skins. This can create more tannic and austere wines with more layers of complexity that require longer periods of bottle aging in order to mature. In contrast, the technique of transferring the must into oak barrels during fermentation and inducing malolactic fermentation early is more commonly associated with New World wine regions and wines that are softer and mature earlier. Chardonnay is a green-skinned grape variety used in the production of white wine. The variety originated in the Burgundy wine region of eastern France, but is now grown wherever wine is produced, from England to New Zealand. For new and developing wine regions, growing Chardonnay is seen as a 'rite of passage' and an easy entry into the international wine market.
Viticulture, viniculture, or winegrowing is the cultivation and harvesting of grapes. It is a branch of the science of horticulture. While the native territory of Vitis vinifera, the common grape vine, ranges from Western Europe to the Persian shores of the Caspian Sea, the vine has demonstrated high levels of adaptability to new environments, hence viticulture can be found on every continent except Antarctica.
Viognier is a white wine grape variety. It is the only permitted grape for the French wine Condrieu in the Rhône Valley.
Chablis is the northernmost Appellation d'origine contrôlée of the Burgundy region in France. Its cool climate produces wines with more acidity and less fruitiness than Chardonnay vines grown in warmer ones. These often have a "flinty" note, sometimes described as "goût de pierre à fusil", and sometimes as "steely". The Chablis AOC is required to use Chardonnay grapes solely.
Terroir is a French term used to describe the environmental factors that affect a crop's phenotype, including unique environment contexts, farming practices and a crop's specific growth habitat. Collectively, these contextual characteristics are said to have a character; terroir also refers to this character.
The Côte de Nuits is a French wine region located in the northern part of the Côte d'Or, the limestone ridge that is at the heart of the Burgundy wine region. It extends from Dijon to just south of Nuits-Saint-Georges, which gives its name to the district and is the regional center. Though some white and rosé wines are produced in the region, the Côte de Nuits is most famous for reds made from pinot noir. The Côte de Nuits covers fourteen communes. Six produce grand cru wines, in the central district between Gevrey-Chambertin and Nuits-Saint-Georges, with four lesser villages either side. The Grand Crus of the Côte de Nuits are some of the smallest appellations in France, less than a hectare in the case of La Romanée.
South African wine has a history dating back to 1659 with the first bottle being produced in Cape Town by its founder and governor Jan van Riebeeck. Access to international markets led to new investment in the South African wine market. Production is concentrated around Cape Town and almost exclusively located within the Western Cape province, with major vineyard and production centres at Constantia, Paarl, Stellenbosch and Worcester.
Spanish wine includes red, white, and sparkling wines produced throughout the country. Located on the Iberian Peninsula, Spain has over 1.2 million hectares planted in wine grapes, making it the most widely planted wine-producing nation, but the third largest producer of wine in the world, behind Italy and France and ahead of the United States; this is due, in part, to the very low yields and wide spacing of the old vines planted on the dry soils found in some of the Spanish wine regions. The country is second in wine exports and ninth in worldwide consumption, with Spaniards drinking, on average, 21.6 litres (5.7 US gal) per person a year. The country has an abundance of native grape varieties, with over 400 varieties planted throughout Spain, though 88 percent of the country's wine production is from only 20 grapes — including the reds Tempranillo, Bobal, Garnacha, and Monastrell; the whites Albariño, Airén, Verdejo, Palomino, and Macabeo; and the three Cava grapes Parellada, Xarel·lo, and Macabeo.
Canaiolo is a red Italian wine grape grown through Central Italy but is most noted in Tuscany. Other regions with plantings of Canaiolo include Lazio, Marche and Sardegna. In Umbria a white berried mutation known as Canaiolo bianco exists. Together with Sangiovese and Colorino it is often used to create Chianti wine and is an important but secondary component of Vino Nobile di Montepulciano. In the history of Chianti it has been a key component blend and during the 18th century may have been the primarily grape used in higher percentage than Sangiovese. Part of its popularity may have been the grape's ability to partially dry out without rotting for use in the governo method of prolonging fermentation. In the 19th century, the Chianti recipe of Bettino Ricasoli called for Canaiolo to play a supporting role to Sangiovese, adding fruitiness and softening tannins without detracting from the wine's aromas. In the aftermath of the phylloxera epidemic, the Canaiolo vines did not take well to grafting onto new American rootstock and the grape began to steadily fall out of favor. As of 2006, total plantings of Canaiolo throughout Italy dropped to under 7,410 acres. Today there are renewed efforts by Tuscan winemakers to find better clonal selections and re-introduce the variety into popular usage.
Cesanese Comune is a red Italian wine grape variety that is grown primarily in the Lazio region. The grape has three Denominazione di origine controllata (DOC) regions dedicated to it-Cesanese di Affile DOC, Cesanese di Olevano DOC and Cesanese di Piglio DOC. Cesanese di Affile appears to be a distinct sub-variety of Cesanese Comune unique to the commune of Affile. There are noticeable differences between Cesanese Comune and the grapes found in Cesanese di Affile, including the size of the grape berry itself. The sub-variety Cesanese d'Affile is considered to be of superior quality of Cesanese Comune and is used as minor ingredient in the Tuscan cult wine Trinoro. The grape has very old origins, and may have been used in Roman winemaking. Today it is rarely seen outside of the Lazio.
Vietnamese wine is wine produced in Vietnam. The area was first cultivated for viticulture during the French colonial rule of the region in the late 19th century. The region's tropical climate was ill-suited for the type of Vitis vinifera that the French colonists were used to and the wine industry turned its attention to fruit wine production. The late 20th century saw a renewed focus on the development of Vitis vinifera with the assistance of flying winemakers from regions like Australia. In 1995, a joint venture with Australian winemakers started an aggressive planting scheme to reintroduce international grape varieties like Cabernet Sauvignon and Chardonnay to land that was until recently littered with landmines left over from the Vietnam War.
Algerian wine is wine cultivated and bottled in Algeria. It has played an important role in the history of wine. Algeria's viticultural history dates back to its settlement by the Phoenicians and continued under the Roman empire. Prior to the Algerian War of Independence (1954–1962), Algeria was the largest wine exporter in the world, accounting for nearly two-thirds of the total international wine trade.
The modern Indian Wine market is small but growing; annual per capita consumption of wine in the country is a mere 9 millilitres, approximately 1/8000th that of France. The main reason for this can be attributed to the fact that Indians preference for hard liquor and beer boasts nearly 98% of market share whereas wine with low ABV only has 2% market share. The viticulture in India has a long history, dating back to the time of the Indus Valley civilization when grapevines were believed to have been introduced from Persia. Winemaking has existed throughout most of India's history but was particularly encouraged during the time of the Portuguese and British colonization of the subcontinent. The end of the 19th century saw the phylloxera louse take its toll on the Indian wine industry, followed by religious and public opinion moving towards the prohibition. Following the country's independence from the British Empire, the Indian government encouraged vineyards to convert to table grape and raisin production. In the 1980s and 1990s, a revival in the Indian wine industry took place as international influences and the growing middle class started increasing demand for the beverage. By the turn of the 21st century, demand was increasing at a rate of 20-30% a year. The city of Nashik in the state of Maharashtra is called the "Wine Capital of India".
Ancient Rome played a pivotal role in the history of wine. The earliest influences on the viticulture of the Italian Peninsula can be traced to ancient Greeks and the Etruscans. The rise of the Roman Empire saw both technological advances in and burgeoning awareness of winemaking, which spread to all parts of the empire. Rome's influence has had a profound effect on the histories of today's major winemaking regions in France, Germany, Italy, Portugal and Spain.
Provence (Provençal) wine comes from the French wine-producing region of Provence in southeast France. The Romans called the area provincia nostra, giving the region its name. Just south of the Alps, it was the first Roman province outside Italy.
New South Wales wine is Australian wine produced in New South Wales, Australia. New South Wales is Australia's most populous state and its wine consumption far outpaces the region's wine production. The Hunter Valley, located 130 km (81 mi) north of Sydney, is the most well-known wine region but the majority of the state's production takes place in the Big Rivers zone-Perricoota, Riverina and along the Darling and Murray Rivers. The wines produced from the Big Rivers zone are largely used in box wine and mass-produced wine brands such as Yellow Tail. A large variety of grapes are grown in New South Wales, including Cabernet Sauvignon, Chardonnay, Shiraz and Sémillon.
Corsica wine is wine made on the Mediterranean island of Corsica. Located 90 km west of Italy, 170 km southeast of France and 11 km north of the island of Sardinia, the island is a territorial collectivity of France, but many of the region's winemaking traditions and its grape varieties are Italian in origin. The region's viticultural history can be traced to the island's settlement by Phoceans traders in 570 BC in what is now the commune of Aléria. In the 18th century, the island came under the control of France. Following the independence of Algeria from French rule, many Algerian Pieds-Noirs immigrated to Corsica and began planting vineyards. Between 1960 and 1976 the vineyard area in Corsica increased fourfold. In 1968, Patrimonio was established as Corsica's first Appellation d'origine contrôlée (AOC). Today, Corsica has nine AOC regions including the island-wide designation Vin de Corse AOC. The majority of the wine exported from Corsica falls under the Vin de pays designation Vin de Pays de l'Île de Beauté. The three leading grape varieties of the region are Nielluccio (Sangiovese), known as the spice wine of France, Sciacarello and Vermentino.
The history of French wine, spans a period of at least 2600 years dating to the founding of Massalia in the 6th century BC by Phocaeans with the possibility that viticulture existed much earlier. The Romans did much to spread viticulture across the land they knew as Gaul, encouraging the planting of vines in areas that would become the well known wine regions of Bordeaux, Burgundy, Alsace, Champagne, Languedoc, Loire Valley and the Rhone.
Precision viticulture is precision farming applied to optimize vineyard performance, in particular maximizing grape yield and quality while minimizing environmental impacts and risk. This is accomplished by measuring local variation in factors that influence grape yield and quality and applying appropriate viticulture management practices. Precision viticulture is based on the premise that high in-field variability for factors that affect vine growth and grape ripening warrants intensive management customized according to local conditions. Precision viticulture depends on new and emerging technologies such as global positioning systems (GPS), meteorologic and other environmental sensors, satellite and airborne remote sensing, and geographic information systems (GIS) to assess and respond to variability.
The history of Chianti dates back to at least the 13th century with the earliest incarnations of Chianti as a white wine. Today this Tuscan wine is one of Italy's most well known and recognizable wines. In the Middle Ages, the villages of Gaiole, Castellina and Radda located near Florence formed as a Lega del Chianti creating an area that would become the spiritual and historical "heart" of the Chianti region and today is located within the Chianti Classico Denominazione di Origine Controllata e Garantita (DOCG). As the wines of Chianti grew in popularity other villages in Tuscany wanted their lands to be called Chianti. The boundaries of the region have seen many expansions and sub-divisions over the centuries. The variable terroir of these different macroclimates contributed to diverging range of quality on the market and by the late 20th century consumer perception of Chianti was often associated with basic mass-market Chianti sold in a squat bottle enclosed in a straw basket, called fiasco.
