Umbilicaria esculenta, the rock tripe or Iwa-take, is a lichen of the genus Umbilicaria that grows on rocks.

Morphology

Two different types of polysaccharides are known to be the structural components, both a heteroglycan from the fungus and a glucan from the alga. [1] U. esculenta lichens have a thallus attached to the substrate with a central holdfast. [2] The thallus is also heteromerous (parts that are different in quality and number) and fully corticated (has a cortex and bark). Many of the Umbilicaria species are characterized by a veined or rugose thalline surface. [2]

Ecology

Umbilicaria esculenta is a saxicolous lichen; it grows on rocks and is known widely as the "rock tripe". It is usually found on at high altitude in East Asia. [3]

Human uses

U. esculenta is considered a delicacy in China, Korea, and Japan where it is eaten in dishes, soups, or in salads. [4]

It has been used as starvation food by Native Americans and early settlers. [4]

They are widely distributed, including on bare rock in Antarctica, and throughout northern parts of North America such as New England and the Rocky Mountains. They are edible when properly prepared; soaking extensively and boiling with changes of water removes the bitterness and purgative properties. They have been used as a famine food in extreme cases when other food sources were unavailable, as by early American northern explorers.

The algal layer lies beneath the cortex. The medulla fastens the lichen to the substrate and is made up of fungal hyphae. The surface of crustose lichens is characterized by branching cracks that periodically close in response to climatic variations such as alternate wetting and drying regimes.

Isolichenan, also known as isolichenin, is a cold-water-soluble α-glucan occurring in certain species of lichens. After further analysis and characterization of the individual components of the extract, isolichenan was named in 1881. It is the first α-glucan to be described from lichens. The presence of isolichenan in the cell walls is a defining characteristic in several genera of the lichen family Parmeliaceae. Umbilicaria polyphylla, commonly known as petaled rock tripe, is a widely distributed species of saxicolous lichen in the family Umbilicariaceae. It was first described by Carl Linnaeus in his 1753 work Species Plantarum as Lichen polyphyllus. German botanist Johann Christian Gottlob Baumgarten transferred it to the genus Umbilicaria in 1790. The lichen has a dark brown to black thallus that measures 2–6 cm (0.8–2.4 in) in diameter. The upper surface is smooth, while the lower surface is sooty black. It grows on exposed rocks, typically in arctic-alpine habitats.

Umbilicaria deusta, commonly known as peppered rock tripe, is a widely distributed species of saxicolous lichen in the family Umbilicariaceae. It was first described by Carl Linnaeus in his 1753 work Species Plantarum as Lichen polyphyllus. German botanist Johann Christian Gottlob Baumgarten transferred it to the genus Umbilicaria in 1790. The lichen has a dark brown to nearly black thallus that typically measures 1–5 cm (0.4–2.0 in) in diameter. The upper surface is covered with tiny black dots that are granular isidia; the lower surface is the same colour as the upper surface, and is either smooth or covereds with dimples. It grows on exposed boulders and rocky outcrops.

Umbilicaria murihikuana is a rare species of saxicolous (rock-dwelling) lichen in the family Umbilicariaceae. It is endemic to New Zealand, where it occurs in mountainous, high-rainfall areas of Otago and Southland. It grows on exposed rocks and boulders at altitudes between 1,000 and 1,500 m, in subalpine to alpine habitats.

Schaereria bullata is a species of lichen in the family Schaereriaceae. It is found in the alpine regions of Tasmania, Australia. This lichen species is characterized by its dark brown to grey-brown thallus, which forms irregular patches over soil or bryophytes, and consists of granules that coalesce to create convex to bullate squamules. The lichen also features distinctive apothecia, which are roundish and typically superficial, and spherical spores.
