The Ayrshire (IPA /ˈɛərʃər/ ) is a Scottish breed of dairy cattle. It originates in, and is named for, the county of Ayrshire in south-western Scotland. Ayrshires typically have red and white markings; the red can range from a shade of orange to a dark brown.
The origins of the Ayrshire are not known. It originated in the county of Ayrshire in Scotland before 1800. It was variously known as the Dunlop, later the Cunningham, and finally, the Ayrshire. These are all parts of the County Ayr. [1] Although they are now native to Ayrshire, Scotland, some historians believe the Ayrshire breed originated in Holland. [2] [3] In 1750, they were crossbred with other breeds of cattle, which led to their distinctive brown spots. [1] The cattle were recognised as a distinct breed by the Highland and Agricultural Society in 1814. [4] Many modern dairy farmers favour Ayrshires because of their longevity, hardiness, and easy calving. [5] These traits are thought to have developed due to the rugged conditions of its native habitat. [6]
The Ayrshire was exported to the United States from 1822, primarily to Connecticut and other parts of New England. [4] The environment was similar to their native land of Scotland. The American Ayrshire Breed Association was founded in 1875. The Approved Ayrshire Milk programme, which licensed farms that owned Ayrshire cattle, began in the 1930s. Ayrshire milk was identified as being of higher quality compared to that of other breeds. [7] Today, the cattle are owned by farmers in many areas of America, including New York and Pennsylvania. [8]
The Ayrshire is a medium-sized breed. [8] The average adult individual "should weigh over 1,200 lb (540 kg) at maturity." [8] Their milk production can reach 20,000 lb (9,100 kg) or greater per annum. With butter fat content of 4.13% and 3.30% protein content [9]
The cattle are usually red and white in colour, the red varying from very deep to a lighter shade. Calves may be de-horned for ease of handling; if they are not, the horns can grow to 30 cm (12 in) in length. The cattle are typically strong and adaptable to many farming methods, and better suited to extensive management than breeds such as the Friesian. [1]
A study of the social behaviour of Polish Black-and-White dairy cattle and their F1-crossbreds with Ayrshire, Jersey, Holstein-Friesian and Swedish Black-and-White breeds, found the Ayrshire crossbreeds were most dominant, least attacked by their group-mates and least susceptible to a group change. [10] A further study found that among Ayrshire, Holstein, Jersey, Brown Swiss and Guernsey (the other common dairy breeds), the Ayrshire had the highest number of agonistic interactions, however, this was not related to bodyweight. [11]
In 2008, 63,356 Ayrshire cattle were registered in the United Kingdom. [12]
The Highland is a Scottish breed of rustic cattle. It originated in the Scottish Highlands and the Western Islands of Scotland and has long horns and a long shaggy coat. It is a hardy breed, able to withstand the intemperate conditions in the region. The first herd-book dates from 1885; two types – a smaller island type, usually black, and a larger mainland type, usually dun – were registered as a single breed. It is reared primarily for beef, and has been exported to several other countries.
The Holstein Friesian is an international breed or group of breeds of dairy cattle. It originated in Frisia, stretching from the Dutch province of North Holland to the German state of Schleswig-Holstein. It is the dominant breed in industrial dairy farming worldwide, and is found in more than 160 countries. It is known by many names, among them Holstein, Friesian and Black and White.
The Simmental or Swiss Fleckvieh is a Swiss breed of dual-purpose cattle. It is named after the Simmental – the valley of the Simme river – in the Bernese Oberland, in the canton of Bern in Switzerland. The breed is typically reddish in colour with white markings, and is raised for both milk and meat.
The Guernsey is a breed of dairy cattle from the island of Guernsey in the Channel Islands. It is fawn or red and white in colour, and is hardy and docile. Its milk is rich in flavour, high in fat and protein, and has a golden-yellow tinge due to its high β-carotene content. The Guernsey is one of three Channel Island cattle breeds; the other two are the Alderney, which is now extinct, and the Jersey.
Dairy cattle are cattle bred with the ability to produce large quantities of milk, from which dairy products are made. Dairy cattle generally are of the species Bos taurus.
The Dairy Shorthorn is a British breed of dairy cattle. It derives from the Shorthorn cattle of Teesside, in the North Riding of Yorkshire and in Northumbria in north-eastern England. The Shorthorn was for this reason at first known as the Durham or Teeswater.
The Irish Moiled is a rare cattle breed from Ireland. It is a dual-purpose breed, reared for both beef and milk. It originated in County Leitrim, County Sligo, County Down, and County Donegal, but the breed is now found throughout Ireland.
The Murrah buffalo is a breed of water buffalo mainly kept for milk production. It originates in Haryana and Punjab of India, where it is kept in the districts of Bhiwani, Agra, Hisar, Rohtak, Jind, Jhajhar, Fatehabad, Gurgaon and the capital region of Delhi. It has been used to improve the milk production of dairy buffalo in other countries, such as Italy, Bulgaria and Egypt. A Murrah buffalo at the Lakshmi Dairy Farm in Punjab set a record of 26.335 kg (58.06 lb) of milk in the 2016 National Livestock Competition and Expo. In Brazil, this breed of buffalo is used for production of both meat and milk. Murrahs sell for a high price.
The Red Sindhi is a dairy breed of zebuine cattle. It is believed to originate in western Sindh and in the Las Bela area of Balochistan, now in Pakistan. It is widely kept in Pakistan, where in 2006 there were approximately 3000000 head; there are small numbers in India and in Bangladesh. Other names include Las Bela, Malir and Sindhi.
The Shetland is a small, hardy Scottish breed of cattle from the Shetland Islands to the north of mainland Scotland. The cattle are normally black and white in colour but there are smaller numbers in grey, red and dun.
German Black Pied cattle are a breed of dairy cattle that originated in the North Sea coast regions of northern Germany and the Netherlands.
The Montbéliarde is a breed of red pied dairy cattle from the area of Montbéliard, in the département of Doubs, in the Bourgogne-Franche-Comté region of eastern France. It is used mainly for dairying and particularly for cheesemaking.
The Australian Friesian Sahiwal, is an Australian breed of dairy cattle whose development commenced in the 1960s by the Queensland Government. It is a combination of the Sahiwal, a dairy breed of Bos indicus from Pakistan and Holstein breeds, designed for the tropical regions of Australia. Cows produce approximately 3,000 litres of milk per lactation under tropical pasture conditions with a high resistance to heat, humidity, ticks and other parasites.
The Black Hereford is a crossbreed of beef cattle produced in Britain and Ireland with Hereford beef bulls with Holstein-Friesian dairy cows. Black Herefords are not usually maintained from generation to generation, but are constantly produced as a byproduct of dairy farming as a terminal cross. They are one of the most common types of beef cattle in Britain and Ireland, outnumbering many pure beef breeds.

The main livestock products in Sri Lanka are milk, meat and eggs. Hides, wools and other products are still not produced within the country. Animal power formerly used in the cultivation of rice and vegetables have been replaced by modern technology to farmlands. However animal husbandry plays an important role in the rural economy for improving the living conditions of farmers in the country.
The Norwegian Red or Norsk Rødt Fe is a Norwegian breed of dairy cattle. It was formed in 1961 through successive mergers of various traditional and regional breeds. In 2016 it accounted for approximately 85% of the cattle in the country, and about 99% of the national dairy herd.
Cholistani is a zebu breed of Punjab in Pakistan and India primarily used in dairy production. Cholistani originated from the Cholistan Desert area, particularly from Rahim Yar Khan, Bahawalpur and Bahawalnagar. This is a recently discovered breed and is thought to have been result of crossing of Sahiwal with other local breeds.
The Swedish Friesian, Swedish: 'Svensk Låglandsboskap', often abbreviated to SLB, is a Swedish breed of dairy cattle. It was established in about 1870 from imports of cattle of Dutch Friesian or German Black Pied type. From about 1970 it has been systematically cross-bred with the American Holstein-Friesian breed, to the point that the original Swedish type may be extinct. The name Swedish Holstein may also be used.It is a type of Swedish cattle breed.
