Organic beef

According to the USDA National Organic Program (NOP) Standards rules passed on October 22, 2002, certified organic livestock, including beef, must come from a fully verifiable production system that collects information on the history of every animal in the program, including its breed history, veterinary care, and feed. Further, to be certified as organic, all cattle should meet the following criteria:

Organic vs. Natural

With the arrival of the organic label, many assumed that the terms “organic” and “natural” were interchangeable, failing to understand the strict regulations required to raise certified organic beef. The USDA defines “natural” beef as minimally-processed beef without additives. Natural beef producers may choose not to use antibiotics or growth-promoting hormones, but there is no third-party verification system required by the USDA. Beef from feedlots can be labeled natural, according to the USDA’s definition.

The U.S. Department of Agriculture allows any fresh meat to be described as "natural" if it includes no artificial flavoring, coloring, preservative or any other artificial ingredient. Minimally processed products, such as ground meat, also count as "natural." [ citation needed ] To be marketed as "natural," the product can not contain any additives, such as monosodium glutamate or salt.[ citation needed ]

Grass-fed vs Grain-fed beef

As organic cattle approach market weight, there are two feeding methods that producers most commonly use to deliver beef products to their customers: “grass-fed” and “grain-fed”. In the “grass-fed” program, the cattle continue to eat certified organic grass right up to the time of slaughter. The USDA is currently developing guidelines to define the term “grass-fed”, and it is expected to call for an all-grass diet of at least 95%. Strictly grass-fed cattle tend to be leaner than grain-fed. Grain-feeding produces cattle with a higher percentage of fat. All grains must be certified organic to ensure the integrity of the program.

A feedlot or feed yard is a type of animal feeding operation (AFO) which is used in intensive animal farming, notably beef cattle, but also swine, horses, sheep, turkeys, chickens or ducks, prior to slaughter. Large beef feedlots are called concentrated animal feeding operations (CAFO) in the United States and intensive livestock operations (ILOs) or confined feeding operations (CFO) in Canada. They may contain thousands of animals in an array of pens.

Fodder, also called provender, is any agricultural foodstuff used specifically to feed domesticated livestock, such as cattle, rabbits, sheep, horses, chickens and pigs. "Fodder" refers particularly to food given to the animals, rather than that which they forage for themselves. Fodder includes hay, straw, silage, compressed and pelleted feeds, oils and mixed rations, and sprouted grains and legumes. Most animal feed is from plants, but some manufacturers add ingredients to processed feeds that are of animal origin.

There are different systems of feeding cattle in animal husbandry. For pastured animals, grass is usually the forage that composes the majority of their diet. In turn, this grass-fed approach is known for producing meat with distinct flavor profiles. Cattle reared in feedlots are fed hay supplemented with grain, soy and other ingredients to increase the energy density of the feed. The debate is whether cattle should be raised on fodder primarily composed of grass or a concentrate. The issue is complicated by the political interests and confusion between labels such as "free range", "organic", or "natural". Cattle raised on a primarily foraged diet are termed grass-fed or pasture-raised; for example meat or milk may be called grass-fed beef or pasture-raised dairy. The term "pasture-raised" can lead to confusion with the term "free range", which does not describe exactly what the animals eat.

<span class="mw-page-title-main">Free range</span> Method of farming where animals can roam freely outdoors

Free range denotes a method of farming husbandry where the animals, for at least part of the day, can roam freely outdoors, rather than being confined in an enclosure for 24 hours each day. On many farms, the outdoors ranging area is fenced, thereby technically making this an enclosure, however, free range systems usually offer the opportunity for the extensive locomotion and sunlight that is otherwise prevented by indoor housing systems. Free range may apply to meat, eggs or dairy farming.

An anaerobic lagoon or manure lagoon is a man-made outdoor earthen basin filled with animal waste that undergoes anaerobic respiration as part of a system designed to manage and treat refuse created by concentrated animal feeding operations (CAFOs). Anaerobic lagoons are created from a manure slurry, which is washed out from underneath the animal pens and then piped into the lagoon. Sometimes the slurry is placed in an intermediate holding tank under or next to the barns before it is deposited in a lagoon. Once in the lagoon, the manure settles into two layers: a solid or sludge layer and a liquid layer. The manure then undergoes the process of anaerobic respiration, whereby the volatile organic compounds are converted into carbon dioxide and methane. Anaerobic lagoons are usually used to pretreat high strength industrial wastewaters and municipal wastewaters. This allows for preliminary sedimentation of suspended solids as a pretreatment process.

Natural food and all-natural food are terms in food labeling and marketing with several definitions, often implying foods that are not manufactured by processing. In some countries like the United Kingdom, the term "natural" is defined and regulated; in others, such as the United States, the term natural is not enforced for food labels, although there is USDA regulation of organic labeling.

Organic egg production is the production of eggs through organic means. In this process, the poultry are fed organic feed. Tallgrass Beef Company is a Kansas-based beef company that sells grass fed and grass finished beef. Tallgrass Beef became the first grass fed beef producer to sell steaks in Chicago in 2005 when Harry Caray’s Restaurant began selling Tallgrass Beef. Its beef is sold via restaurants and grocery stores throughout the Midwest, East Coast, and Southeast, in addition to mail order. Tallgrass Beef Company raises some of its cattle on founder Bill Kurtis's Sedan, Kansas ranch. Tallgrass also has a network of family farmers and ranchers who raise and finish grass fed cattle that fit the standards of the Tallgrass protocols.

<span class="mw-page-title-main">Ractopamine</span> Animal feed additive

Ractopamine is an animal feed additive used to promote leanness and increase food conversion efficiency in farmed animals in several countries, but banned in others. Pharmacologically, it is a phenol-based TAAR1 agonist and β adrenoreceptor agonist that stimulates β1 and β2 adrenergic receptors. It is most commonly administered to animals for meat production as ractopamine hydrochloride. It is the active ingredient in products marketed in the US as Paylean for swine, Optaflexx for cattle, and Topmax for turkeys. It was developed by Elanco Animal Health, a division of Eli Lilly and Company.

Animal feed is food given to domestic animals, especially livestock, in the course of animal husbandry. There are two basic types: fodder and forage. Used alone, the word feed more often refers to fodder. Animal feed is an important input to animal agriculture, and is frequently the main cost of the raising or keeping of animals. Farms typically try to reduce cost for this food, by growing their own, grazing animals, or supplementing expensive feeds with substitutes, such as food waste like spent grain from beer brewing.

Happy Cow Creamery is a family-owned dairy farm in Pelzer, South Carolina that bottles and sells its own milk on site from the farm's closed herd of grass-fed Holstein cattle. The creamery's whole milk, buttermilk and chocolate milk is sold in the farm's on-site store and through grocery, convenience and country stores in Upstate region of South Carolina. The milk is not homogenized and is low-temperature pasteurized and inspected by the State of South Carolina.

The Organic Foods Production Act of 1990 (OFPA) authorizes a National Organic Program (NOP) to be administered by USDA's Agricultural Marketing Service (AMS). The program is based on federal regulations that define standard organic farming practices and on a National List of acceptable organic production inputs. Private and state certifiers visit producers, processors, and handlers to certify that their operations abide by the standards. Once certified, these operations may affix the USDA Organic Seal. USDA has established four distinct categories for labeling organic products—100 percent organic, organic, "made with" organic ingredients, and specific organic ingredients—and only 100 percent organic and organic categories can use the USDA Organic Seal. It is illegal for anyone to use the word "organic" on a product if it does not meet the standards set in the law and regulations. The regulations under the OFPA are intended to set uniform minimum standards for organic production. However, states may adopt additional requirements after review and approval by USDA. AMS re-accredits certifying agents every 5 years, maintains federal oversight to assure truth in labeling, and provides assurance that imported organic products have been produced under standards that are equivalent to the U.S. standards.

Risk assessment for organic swine health is the process of evaluating the likelihood and potential impact of various factors that may affect the health and well-being of organic swine. Risks associated with organic swine farming may differ to those associated with non-organic swine farming, and is of increasing relevance due to growth in the sector. While organic swine farming makes up a small share of U.S. swine farming overall, numbers have increased significantly in recent years. Additionally, non-certified organic swine herds are not accounted in official statistics. Consumer demand, stemming from the larger organic agriculture movement has helped spur growth in this industry.

<span class="mw-page-title-main">Feed manufacturing</span>

Feed manufacturing refers to the process of producing animal feed from raw agricultural products. Fodder produced by manufacturing is formulated to meet specific animal nutrition requirements for different species of animals at different life stages. According to the American Feed Industry Association (AFIA), there are four basic steps:

  1. Receive raw ingredients: Feed mills receive raw ingredients from suppliers. Upon arrival, the ingredients are weighed, tested and analyzed for various nutrients and to ensure their quality and safety.
  2. Create a formula: Nutritionists work side by side with scientists to formulate nutritionally sound and balanced diets for livestock, poultry, aquaculture and pets. This is a complex process, as every species has different nutritional requirements.
  3. Mix ingredients: Once the formula is determined, the mill mixes the ingredients to create a finished product.
  4. Package and label: Manufacturers determine the best way to ship the product. If it is prepared for retail, it will be "bagged and tagged," or placed into a bag with a label that includes the product's purpose, ingredients and instructions. If the product is prepared for commercial use, it will be shipped in bulk.

Antibiotic use in the United States poultry farming industry is the controversial prophylactic use of antibiotics in the country's poultry farming industry. It differs from the common practice in Europe, where antibiotics for growth promotion were disallowed in the 1950s.
