A plum tomato, also known as a processing tomato or paste tomato, is a type of tomato bred for sauce and packing purposes. It is generally oval or cylindrical in shape, with significantly fewer locules (seed compartments, usually only two) than standard round tomatoes and a generally higher solid content, making them more suitable for processing into paste. Plum tomatoes are also sometimes favored by cooks for use during the tomato off-season, as they are generally considered more amenable to handling and are therefore available in a state closer to ripe than other supermarket tomatoes.[ citation needed ]
Varieties commonly available in United States markets include Roma VF and San Marzano (semi-determinate; a signature tomato of Italian cuisine [1] ), though there are many other varieties, such as the short-season Ropreco Paste and the larger Amish Paste and Big Mama. Five hybrid cultivars grown in California constitute over 60% of total production of processing tomatoes.
Small plum tomatoes (similar in size to cherry tomatoes) are known as grape tomatoes.[ citation needed ]
Tomato sauce can refer to many different sauces made primarily from tomatoes, usually to be served as part of a dish, rather than as a condiment. Tomato sauces are common for meat and vegetables, but they are perhaps best known as bases for sauces for Mexican salsas and Italian pasta dishes. Tomatoes have a rich flavor, high water content, soft flesh which breaks down easily, and the right composition to thicken into a sauce when stewed, without the need for thickeners such as roux or masa. All of these qualities make them ideal for simple and appealing sauces.

Sweet corn, also called sweetcorn, sugar corn and pole corn, is a variety of corn grown for human consumption with a high sugar content. Sweet corn is the result of a naturally occurring recessive mutation in the genes which control conversion of sugar to starch inside the endosperm of the corn kernel. Sweet corn is picked when still immature and prepared and eaten as a vegetable, rather than field corn, which is harvested when the kernels are dry and mature. Since the process of maturation involves converting sugar to starch, sweet corn stores poorly and must be eaten fresh, canned, or frozen, before the kernels become tough and starchy.
The persimmon is the edible fruit of a number of species of trees in the genus Diospyros. The most widely cultivated of these is the kaki persimmon, Diospyros kaki – Diospyros is in the family Ebenaceae, and a number of non-persimmon species of the genus are grown for ebony timber. In 2019, China produced 75% of the world total of persimmons.
Pollination of fruit trees is required to produce seeds with surrounding fruit. It is the process of moving pollen from the anther to the stigma, either in the same flower or in another flower. Some tree species, including many fruit trees, do not produce fruit from self-pollination, so pollinizer trees are planted in orchards.
Prunus mume is a Chinese tree species classified in the Armeniaca section of the genus Prunus subgenus Prunus. Its common names include Chinese plum,Japanese plum, and Japanese apricot. The flower, long a beloved subject in the traditional painting and poetry of Sinospheric countries, is usually called plum blossom. This distinct tree species is related to both the plum and apricot trees. Although generally referred to as a plum in English, it is more closely related to the apricot. In East Asian cuisine, the fruit of the tree is used in juices, as a flavouring for alcohol, as a pickle, and in sauces. It is also used in traditional medicine.
Tomato paste is a thick paste made from tomatoes, which are cooked for several hours to reduce water content, straining out seeds and skins, and cooking the liquid again to reduce the base to a thick, rich concentrate. Greengages are grown in temperate areas and are known for the rich, confectionery flavour. They are considered to be among the finest dessert plums; Anna Pavord calls them "most ambrosial of all tree fruit" and David Karp describes them as "the best fruit in the world".

The tomato is the edible berry of the plant Solanum lycopersicum, commonly known as the tomato plant. The species originated in western South America, Mexico, and Central America. The Nahuatl word tomatl gave rise to the Spanish word tomate, from which the English word tomato derives. Its domestication and use as a cultivated food may have originated with the indigenous peoples of Mexico. The Aztecs used tomatoes in their cooking at the time of the Spanish conquest of the Aztec Empire, and after the Spanish encountered the tomato for the first time after their contact with the Aztecs, they brought the plant to Europe, in a widespread transfer of plants known as the Columbian exchange. From there, the tomato was introduced to other parts of the European-colonized world during the 16th century.
