[1] The estimated total world production for eggplants in 2022 was 59,312,600 metric tonnes, up by 1.0% from 58,705,398 tonnes in 2021. [1] China was by far the largest producer of eggplants, accounting for nearly 65% of global production at 38,284,897 tonnes. Dependent territories are shown in italics.

Eggplant, aubergine, brinjal, or baigan is a plant species in the nightshade family Solanaceae. Solanum melongena is grown worldwide for its edible fruit.
Baba ghanoush, also spelled baba ganoush or baba ghanouj, is a Levantine appetizer consisting of finely chopped roasted eggplant, olive oil, lemon juice, various seasonings, and tahini. The eggplant is traditionally baked or broiled over an open flame before peeling, so that the pulp is soft and has a smoky taste. It is a typical meze (starter) of the regional cuisine, often served as a side to a main meal and as a dip for pita bread.
Moussaka is an eggplant (aubergine)- or potato-based dish, often including ground meat, which is common in the Balkans and the Middle East, with many local and regional variations.

The tomato is the edible berry of the plant Solanum lycopersicum, commonly known as the tomato plant. The species originated in western South America, Mexico, and Central America. Its domestication and use as a cultivated food may have originated with the indigenous peoples of Mexico. The Aztecs used tomatoes in their cooking at the time of the Spanish conquest of the Aztec Empire, and after the Spanish encountered the tomato for the first time after their contact with the Aztecs, they brought the plant to Europe, in a widespread cultural interchange known as the Columbian exchange. From there, the tomato was introduced to other parts of the European-colonized world during the 16th century.
Agriculture in the Philippines is a major sector of the economy, ranking third among the sectors in 2022 behind only Services and Industry. Baigan bharta, also spelled bainganbharta or baigan chokha is an Indian dish prepared by mashing or mincing grilled eggplant (baigan) with tomato, onion, herbs and spices, with variations being common from chef to chef. Traditionally, cooking the eggplants over charcoals, inside of a tandoor, barbecue grill or oven, or even directly applying flame to the outside of the fruit infuses the dish with a smoky flavour; the blackened skin is then easily peeled and the eggplant may be further prepared.
Malidzano is a traditional Macedonian spread made from puréed bell peppers, eggplant, oil, salt and mustard (optional). It derives its name from the Italian word for eggplant, melanzane. Malidzano is usually served as an appetizer with a side of bread and piece of white cheese. In other countries of the Western Balkans, it is prepared with green or red peppers, affecting the color of the spread.
Harissa is a hot chili pepper paste, native to the Maghreb. The main ingredients are roasted red peppers, Baklouti peppers (بقلوطي), spices and herbs such as garlic paste, caraway seeds, coriander seeds, cumin and olive oil to carry the oil-soluble flavors.
China is the world's leading producer and consumer of eggplants. The leading producers, after China, are India, Turkey, Japan, Egypt and Italy; a Mediterranean climate favours its production. China has produced eggplants since the 5th century BC for various reasons, not just for food. The eggplant is originally from India and reached coastal regions of mainland China first and then Taiwan; the long slender variety is the preferred one for cooking. Dark eggplant skins were historically used by aristocratic women to make black dye, which they often used to "stain their teeth to a black lustre". In Japan, this is called ohaguro.
Sugar has been produced in India since ancient times and then it spread to other parts of the world. Sugarcane is a native of tropical Indian subcontinent and Southeast Asia. In India, sugarcane is planted thrice a year in October, March and July depending on part of the country. Most of the sugar production in India takes at local Cooperative Sugar mills. Kulawo is a Filipino salad made with either minced banana blossoms or grilled eggplants cooked in coconut milk that is distinctively extracted from grated coconut meat toasted on live coals. It is a pre-colonial dish that originates from the provinces of Laguna and Quezon. Kulawo is a type of kilawin and ginataan. It is fully vegan and has a unique smoky taste that has been compared to smoked meat or fish dishes.
