La Trompette was closed in January 2013 for wider building expansion. Rob Weston, after sixteen years as the head chef of The Square under chef patron Phil Howard, replaced La Trompette's previous head chef Anthony Boyd amid reopening in late February 2013. [3]

St. John is an English restaurant on St John Street in Smithfield, London. It was opened in October 1994 by Trevor Gulliver, Fergus Henderson, and Jon Spiteri on the premises of a former bacon smoke-house. Under Henderson's guidance as head chef, St. John has specialised in "nose to tail eating", with a devotion to offal and other cuts of meat rarely seen in restaurants, often reclaiming traditional British recipes. Typical dishes include pigs' ears, ducks' hearts, trotters, pigs' tails, bone marrow and, when in season, squirrel. As a result, St. John has developed a following amongst gastronomic circles: "chefs, foodies, food writers and cooks on sabbatical".

In 1987 the restaurant was opened by husband and wife, David and Helen Everitt-Mattias, initially for a period of three years, but the couple stayed with the restaurant due to high interest rates. To keep costs down, David, the head chef, incorporated cheaper cuts of meat and foraged ingredients on the menu. As of 1 October 2018, the restaurant has been downgraded to 1 Michelin star for the 2019 guide. It is currently the only Michelin starred restaurant in Gloucestershire.

Its restaurant was run by Chef Patron James Sommerin until 2013; it gained a Michelin star in 2007. It contains eight double rooms and a 2-acre (0.81 ha) garden.
The Square was a London fine dining restaurant, opened on 13 December 1991 in St James's. Since its opening, it had been co-owned by chef Phil Howard and wine expert Nigel Platts-Martin. It also earned its first Michelin star in 1994 and retained it from then on. After relocating to Mayfair in February 1997, The Square won a second Michelin star in 1998, which it retained until 2016, the same year when Howard and Platts-Martin sold the restaurant to a company held by Marlon Abela. It regained its first Michelin star in 2017. It closed on 31 January 2020, causing the restaurant to lose its star the following year.
Tom Aikens, also named Tom Aitkens, is an English Michelin-starred chef. Aikens briefly worked for chefs in London and Paris restaurants. Under his tenure from 1996 to 1999 as head chef and then chef patron, Pied à Terre earned its two Michelin stars in January 1997.
Elystan Street is a London restaurant co-owned by chef patron Phil Howard and Rebecca Mascarenhas. Howard and Mascarenhas established the restaurant on 27 September 2016, six months after Howard sold and left his previous restaurant The Square. Elystan Street earned its first Michelin star in October 2017 and has retained it since.
