Gulaman, in Filipino cuisine, is a bar, or powdered form, of dried agar or carrageenan extracted from edible seaweed used to make jelly-like desserts. In common usage, it also usually refers to the refreshment sago't gulaman , sometimes referred to as samalamig , sold at roadside stalls and vendors. [1]

History

Gracilaria , which produces agar, is known as gulaman, guraman, gulaman dagat, or gar-garao in Tagalog and in other languages in the northern Philippines. [2] [3] It has been harvested and used as food for centuries, eaten both fresh or sun-dried and turned into jellies. The earliest historical attestation is from the Vocabulario de la lengua tagala (1754) by the Jesuit priests Juan de Noceda and Pedro de Sanlucar, where golaman or gulaman was defined as "una yerva, de que se haze conserva a modo de Halea, naze en la mar" (modern Spanish orthography: “una hierva, de que se hace conserva a modo de jalea, nace en la mar”; “an herb, from which a jam-like preserve is made, grows in the sea"), with an additional entry for guinolaman to refer to food made with the jelly. [4] [5]

Gulaman can also be made from Eucheuma spp., which produces the similarly jelly-like carrageenan. Eucheuma is known as gusô or tambalang in Visayan languages. Use of gusô to make jellies among the Visayans has been recorded in the even earlier Diccionario De La Lengua Bisaya, Hiligueina y Haraia de la isla de Panay y Sugbu y para las demas islas (c.1637) of the Augustinian missionary Alonso de Méntrida (in Spanish). In the book, Méntrida describes gusô as being cooked until it melts, and then allowed to congeal into a sour dish. [6]

Gulaman is now the chief Filipino culinary use of agar, which is made of processed Gracilaria seaweed (around 18 species occur naturally in the Philippines); [2] [7] or carrageenan derived from other farmed seaweed species like Eucheuma and Kappaphycus alvarezii , which were first cultivated commercially in the Philippines. [1] [8] [9] [10] Aside from Gracilaria and Eucheuma, they were also traditionally made from other species of edible seaweeds including Betaphycus gelatinus , Gracilariopsis longissima , Gelidiella acerosa , and members of the genus Agardhiella . [3] [11]

It is usually sold dehydrated and formed into foot-long dry bars, which are either plain or coloured. [12] It is also available in powder form. [13]

Uses

Gulaman bars are used in the various Filipino refreshments or desserts such as sago at gulaman , buko pandan , agar flan, halo-halo , fruit cocktail jelly, different varieties of Filipino fruit salads, black gulaman, and red gulaman.

Differences from gelatine

The term gelatine (or "jelly") and gulaman are used synonymously in the Philippines, although they are very different products. While gelatine is an animal-derived protein, gulaman is a plant-derived carbohydrate [14] made from seaweed. This distinction makes gulaman suitable for those whose dietary restrictions exclude gelatine, such as Muslims or vegans.

Gelatine dissolves in hot water, but boiling water is necessary to dissolve gulaman. Unlike gelatine which sets at cold temperatures, gulaman sets at room temperature. While gelatine can melt at room temperature, it is uniquely thermo-reversible [14] to its previous shape and form.

Agar, or agar-agar, is a jelly-like substance consisting of polysaccharides obtained from the cell walls of some species of red algae, primarily from "ogonori" (Gracilaria) and "tengusa" (Gelidiaceae). As found in nature, agar is a mixture of two components, the linear polysaccharide agarose and a heterogeneous mixture of smaller molecules called agaropectin. Carrageenans are widely used in the food industry, for their gelling, thickening, and stabilizing properties. Their main application is in dairy and meat products, due to their strong binding to food proteins. In recent years, carrageenans have emerged as a promising candidate in tissue engineering and regenerative medicine applications as they resemble native glycosaminoglycans (GAGs). They have been mainly used for tissue engineering, wound coverage, and drug delivery.

<i>Kappaphycus alvarezii</i> Species of red algae

Kappaphycus alvarezii, the elkhorn sea moss, is a species of red algae. The elkhorn sea moss varies in size, weight, and age. It is a dark greenish-brown hue and can sometimes be deep purple. The moss is cylindrical in shape throughout the seaweed. Its diameter averages 1.526 mm when dried. Near the base of the seaweed, its average length is from 1 mm to 17 mm and 1 mm to 2 mm in diameter. Firm algae are around 2 m tall, with axes and branches around 1–2 cm in diameter. It used to be believed they reproduced through vegetative fermentation, but recent studies show that they reproduce sexually. They reproduce through vegetative propagation and reproduce sexually. Cross sections of the Elkhorn sea moss have a medulla composed of small thick-walled cells interspaced among large parenchyma cells. This moss is used for various types of foods that humans consume and can also be used to make a jelly-like dessert. This moss is a very good source of minerals and of high commercial interest. It is one of the most important commercial sources of carrageenans, a family of gel-forming, viscosifying polysaccharides. Farming methods affect the character of the carrageenan that can be extracted from the seaweed. It is very fast-growing, known to double its biomass in 15 days.

<i>Eucheuma</i> Genus of algae

Eucheuma, commonly known as sea moss or gusô, is a rhodophyte seaweed that may vary in color. Eucheuma species are used in the production of carrageenan, an ingredient for cosmetics, food processing, and industrial manufacturing, as well as a food source for people in the Philippines, Caribbean and parts of Indonesia and Malaysia. Eucheuma cottonii – which grows in the Caribbean and cultivated in the Philippines – is the particular species known as gusô. Other species include Betaphycus gelatinae, Eucheuma denticulatum, and several species of the genus Kappaphycus, including K. alvarezii. Since the mid-1970s, Kappaphycus and Eucheuma have been a major source for the expansion of the carrageenan industry.

Mangubat is a Visayan, and old Tagalog word that means "to battle or combat".

Gavino Trono Jr. is a Filipino marine biologist dubbed as the "Father of Kappaphycus farming". He was conferred the rank of National Scientist of the Philippines for contributions to the study of tropical marine phycology, focusing on seaweed biodiversity. He is currently a professor emeritus of the University of the Philippines Marine Science Institute.

Paul Klein, also called Pablo Clain, was a Bohemian Jesuit missionary, pharmacist, botanist, author of an astronomic observation, writer, rector of Colegio de Cavite as well as the rector of Colegio de San José and later Jesuit provincial superior in the Philippines, the highest ranking Jesuit official in the country. Klein is known as an important personality of life during the 18th-century Manila.

<span class="mw-page-title-main">Daramba</span>

Daramba is a Visayan term referring to paddling and fighting platforms mounted directly on the outriggers (katig) of traditional large trimaran warships (balangay) of the Philippines. They accommodated one or more rows on each side of commoner warriors (horo-han) with large leaf-shaped paddles (bugsay) during travel, naval warfare, and seasonal coastal raids (mangayaw). The paddlers were kept in rhythm by various chants and songs. The platforms for the horo-han are distinguished from the side-mounted fighting platforms (pagguray) of the warrior-nobility, which were also built on the outriggers, in that the daramba was mounted on or near the water surface, while the pagguray was mounted above, closer to the hull.

Laksoy, is a traditional Filipino distilled nipa palm liquor. It is derived from tubâ made from nipa palm sap that has been aged for at least 48 hours. It originates from Eastern Mindanao, the Visayas Islands, and the Bicol Region. During the Spanish colonial period, it was also known as vino de nipa in Spanish. Like the lambanog, it is particularly potent, having a typical alcohol content of 70 to 100 proof after a single distillation.
