The Ark of Taste is an international catalogue of endangered heritage foods which is maintained by the global Slow Food movement. The Ark is designed to preserve at-risk foods that are sustainably produced, unique in taste, and part of a distinct ecoregion. Contrary to the most literal definition of plant and animal conservation, the Ark of Taste aims to maintain edibles in its purview by actively encouraging their cultivation for consumption. [1] By doing so, Slow Food hopes to promote the growing and eating of foods which are sustainable and preserve biodiversity in the human food chain.
The list is intended to include foods which are rare, and are "culturally or historically linked to a specific region, locality, ethnicity or traditional production practice". [2] Which foods meet these criteria is decided by an adjudicating committee made up of members of the Slow Food nonprofit organization; all candidates go through a formal nomination process which includes tastings and identification of producers within the region. [3]
Since the foundation of the Ark in 1996, 5312 products (as of September 2021 [update] ) from over 130 countries have been included and growing daily. [4] The list includes not only prepared foods and food products, but also a great many livestock breeds, as well as vegetable and fruit cultivars. All foods in the catalogue are accompanied by a list of resources for those wishing to grow or buy them.

Slow Food is an organization that promotes local food and traditional cooking. It was founded by Carlo Petrini in Italy in 1986 and has since spread worldwide. Promoted as an alternative to fast food, it strives to preserve traditional and regional cuisine and encourages farming of plants, seeds, and livestock characteristic of the local ecosystem. It promotes local small businesses and sustainable foods. It also focuses on food quality, rather than quantity. It was the first established part of the broader slow movement. It speaks out against overproduction and food waste. It sees globalization as a process in which small and local farmers and food producers should be simultaneously protected from and included in the global food system.
The Corriente is an American breed of small cattle, used principally for rodeo events. It derives from Criollo Mexicano stock, which in turn descends from Iberian cattle brought to the Americas by the Conquistadors, and introduced in the sixteenth and seventeenth centuries to various parts of what is now Mexico.
The Belted Galloway is a traditional Scottish breed of beef cattle. It derives from the Galloway stock of the Galloway region of south-western Scotland, and was established as a separate breed in 1921. It is adapted to living on the poor upland pastures and windswept moorlands of the region. The exact origin of the breed is unclear, although the white belt for which they are named, and which distinguishes the breed from black Galloway cattle, is often surmised to be the result of cross-breeding with the similarly coloured Dutch Lakenvelder.
The Randall Lineback or Randall is an American breed of cattle. It originated in Bennington County, Vermont, and is critically endangered.
The Maremmana is a breed of cattle reared in the Maremma, a former marshland region in southern Tuscany and northern Lazio in central Italy. It is raised principally in the provinces of Grosseto, Rome and Viterbo.
Morlacco or Morlacco del Grappa is an Italian cow's-milk cheese from Monte Grappa, in the provinces of Vicenza, Treviso, and Belluno), where cheesemakers once produced a soft cow's milk cheese, low in fat, with an uncooked curd that was named after their native region: Morlachia.
The Old Gloucester or Gloucester is a traditional British breed of cattle originating in Gloucestershire and surrounding areas in the West Country of England. It was originally a triple-purpose breed, reared for milk, for beef and for draught use; it is now a dual-purpose animal. It is an endangered breed, and its conservation status is listed as "priority" by the Rare Breeds Survival Trust.
The American Buff is an American breed of domestic goose. It was accepted by the American Poultry Association in 1947. It is named for its single plumage variety, which is a pale buff or apricot-fawn in color.
The Bourbon Red is an American breed of domestic turkey. It is named for its reddish-brown plumage and for its area of origin, Bourbon County, Kentucky, where it was developed in the last years of the nineteenth century. It was accepted into the Standard of Perfection of the American Poultry Association in 1909, and in the early twentieth century was an important commercial meat breed until the Broad Breasted White began to dominate industrial production. The Bourbon Red is considered a heritage turkey; it is an endangered breed, classified as 'watch' by the Livestock Conservancy. It was formerly known as the Bourbon Butternut or as the Kentucky Red.
The American Tunis or Tunis is an endangered American breed of fat-tailed sheep. It derives from Tunisian Barbarin sheep imported to the United States from Tunisia in 1799. It is raised primarily for meat.
The Burlina is a breed of cattle from the mountainous areas of the Veneto region of north-east Italy. It is distributed mainly in the provinces of Treviso, Verona and Vicenza. It is a dual-purpose breed, but is raised principally for milk production. It has been suggested that it may be related to the similar Bretonne Pie Noir breed of small pied dairy cattle in Brittany.
The Delaware is an American breed of chicken with an unusual plumage pattern. It was developed in the state of Delaware in the mid-twentieth century, and was initially known as the Indian River. It was briefly of some importance in the American chicken industry, until it was superseded by the common industrial Cornish Rock cross.
The Norfolk Black, also known as the Black Spanish or Black Turkey, is a British breed of domestic turkey. It is thought to derive from birds taken to Britain from Spain, where they had arrived with Spanish explorers returning from the New World.
The Florida Cracker or Florida Scrub is an American breed of cattle. It originated in Spanish Florida and later in the American state of Florida and is named for the Florida cracker culture in which it was kept. It is one of the Criollo breeds that descend from the Spanish cattle originally brought to the Americas by the Spanish Conquistadors; among the other North American breeds in this group are the Pineywoods, the Corriente and Texas Longhorn. Unlike the Pineywoods – to which it is closely related – the Florida Cracker has not been inter-bred with breeds of North European origin.
The Bionda Piemontese is a traditional Italian dual-purpose breed of chicken. It originates in the Piedmont region of north-western Italy, from which it takes its name. It may also be called the Bionda di Cuneo, after the comune of Cuneo or the surrounding province; Bionda di Villanova, after the comune of Villanova d'Asti in the province of Asti; Rossa delle Crivelle, after a village near Buttigliera d'Asti; or Nostralina.
The Lithuanian Native or Lithuanian: Lietuvos Vietinė is a traditional Lithuanian breed of domestic pig. In the twenty-first century it is an endangered breed, kept principally for conservation reasons. The principal herd is kept at the Centre for Farm Animal Genetic Resources of Baisogala, in the Radviliškis District Municipality of central Lithuania.
The Azpi Gorri is a traditional Basque breed of domestic goat. It originates in the historical Basque Country, and is the only recognised goat breed of that area. It is distributed in the northern part of the province of Álava and in southern Bizkaia, with a few herds in the autonomous community of Navarre.
The Euskal Antzara is a traditional Spanish breed of domestic goose. It originates in the historical Basque Country. It is the only recognised goose breed of that area, and one of two Spanish breeds of goose, the other being the Oca Empurdanesa. It is distributed mainly in the comarca of Enkarterri in the province of Bizkaia, particularly in the areas of Abanto, Balmaseda, Güeñes, Karrantza and Zalla.
The Preta Lusitânica is a Portuguese breed of domestic chicken. It is one of four Portuguese chicken breeds, the others being the Amarela, the Branca and the Pedrês Portuguesa.
The Ramelsloher is a German breed of dual-purpose chicken. It was bred in the 1870s by A.D. Wichmann, a Hamburg shipowner, and is named for the village of Ramelsloh, which lies some thirty kilometres south of Hamburg. In the early twentieth century it was an important utility chicken; in the twenty-first century it is an endangered breed. It is recognised in only two colours, white and buff; there is no bantam Ramelsloher.
