Skillet (formerly Skillet Street Food) is a Seattle gourmet burger van that specializes in bacon jam. It has been described as a restaurant on wheels. [2] In 2011, they opened a diner in Seattle. [3]

Skillet has been listed among America's top portable kitchens [4] and is well known for their bacon jam. [5] To create the consistency required for the jam, creator Josh Henderson focuses on the bacon fat and the reduced down vinegar and onion all cooking in one pot, which requires regular skimming. [6] Skillet's jam has received a generally positive reception, with a flavor of pulled pork. A "Taste Test" review suggested "...the grilled cheese with bacon jam was the best-received Taste Test item in the feature’s storied history." [7]

Its origin has been placed in either Tijuana or Hermosillo, where it was originally served in a bolillo instead of a hot dog bun. These dogs are sold from carts that are ubiquitous along Avenida Revolución and the area surrounding the border in Tijuana, as well as the bar district in Ensenada.

Diners, Drive-Ins and Dives is an American food reality television series that premiered on April 23, 2007, on the Food Network. It is hosted by Guy Fieri. The show originally began as a one-off special that aired on November 6, 2006. The show features a "road trip" concept, similar to Road Tasted, Giada's Weekend Getaways, and $40 a Day. Fieri travels around the United States, Canada, and Mexico looking at various diners, drive-in restaurants, and dive bars. Baconnaise is a bacon-flavored, mayonnaise-based food spread that is ovo vegetarian and kosher certified. It was created by Justin Esch and Dave Lefkow, founders of J&D's Foods, in November 2008, and sold 40,000 jars within six months. It was test-marketed in Grand Forks, North Dakota, to determine consumer interest. After being featured on both The Daily Show and The Oprah Winfrey Show, sales of Baconnaise increased significantly, with more than a million jars sold.

In the 2000s, the English chef Heston Blumenthal experimented with ice cream, making a custard similar to scrambled eggs and adding bacon to create one of his signature dishes. In 2015, Martin and Suzie Cowley of Wales claimed to have invented Bacon Jam, however, Chef Mike Oraschewsky stated they started making Bacon Jams since 2013.
