Skillet (formerly Skillet Street Food) is a restaurant chain in the Seattle area. Originally launched as a gourmet burger van that was known for its bacon jam, it was described in 2011 as a restaurant on wheels. [2] In 2011, it also opened a diner in Seattle. [3]
The company's founder sold the business in 2013. [4] Skillet closed its food trucks during the Covid-19 pandemic in 2020, [5] but continues to operate at five locations (full restaurant service at Capitol Hill and Post Alley, full and counter service at SeaTac Airport, and counter service at Seattle Center and Skillet Regrade on 6th Avenue) as of 2024. [6] Some of its current menu items continue to feature bacon jam.
Skillet was listed in the Details magazine list of America's top portable kitchens in 2011 [7] and was well known for its bacon jam in 2009, which it also sold and shipped by mail order for home consumption. [8] To create the consistency required for the jam, creator Josh Henderson focused on the bacon fat and the reduced down vinegar and onion by cooking it together in one pot, which required regular skimming. [9] A review by The Takeout in 2011 said "the grilled cheese with bacon jam was the best-received Taste Test item in the feature's storied history." [10] Henderson sold the business in 2013. [4]
In 2023, the company agreed to pay about $325,000 to settle allegations of wage theft, improper firings, failure to give employees breaks and sick leave, and making misleading statements saying that all service charges were given to workers. [4] [11]
Little Chef was a British chain of roadside restaurants; founded in 1958 by Sam Alper and Peter Merchant who were inspired by American diners. The chain was famous for the "Olympic Breakfast" – its version of a full English breakfast – as well as its "Early Starter" and "Jubilee Pancakes". The restaurants were mostly located on A roads, often paired with a Travelodge motel, a Burger King and a petrol station. The chain was also located along motorways in Moto Services, for a time.
Bacon jam is a bacon-based relish, similar to the Austrian starter Verhackertes. It is made through a process of slow cooking the bacon, along with onions, vinegar, brown sugar and spices, before mixing it in a food processor. In 2015, Martin and Suzie Cowley of Wales claimed to have invented Bacon Jam. However, Chef Mike Oraschewsky stated they started making Bacon Jams in 2013. Josh Henderson of Skillet Street Foods has been selling Bacon Jam as of 2010.
Mighty-O Donuts is a chain of donut cafe restaurants and a donut wholesaler in Seattle, Washington, founded in 2000. Their donuts and toppings are made in Seattle from scratch using organic, 100% Plant-Based NON-GMO ingredients. The product contains no artificial colors, no dyes, no additives, and no preservatives. The chain bakes and sells donuts at five locations in the area. Mighty-O sells various to-go coffee items, coffee bean blends, and merchandise.
The Original Dinerant, or simply The Original, is a diner serving American cuisine in Portland, Oregon, United States. Owned by Sage Hospitality Resources, Guy Fieri visited the "modern" and "upscale" diner to film a 2016 episode of the Food Network's Diners, Drive-Ins and Dives. The diner has hosted competitive eating contests and other special events. The Original has received a generally positive reception and is most known for its glazed doughnut sliders and alcoholic milkshakes. The restaurant's mezzanine level has an amusement arcade and bar called The Dinercade added in early 2019.

Ristorante Machiavelli is an Italian restaurant in Edmonds, Washington, in the United States. The original location operated on Seattle's Capitol Hill from 1988 to 2024. It was housed in the historic Booker Building (1912), and the restaurant had billed itself as "a Capitol Hill tradition since 1988". The Edmonds location, originally an outpost, opened in December 2023.

Rancho Bravo Tacos was a small chain of Mexican restaurants in Seattle, in the U.S. state of Washington. Owner Freddy Rivas started the business as a food truck in Kent in 2002, before relocating to Wallingford in 2007. The business also operated restaurants on Capitol Hill and in the University District. Serving cuisine such as tacos, nachos, burritos, tamales, and tortas, the business garnered a generally positive reception as an inexpensive and late night option for diners, with the tacos and burritos receiving the most praise.

There have been two locations; the original restaurant operated on Broadway from 2012 to 2024, and an outpost operates in Ballard. The business is owned by Kevin Chung, who had intended to expand the 8oz. Burger Bar chain.

Dough Joy is a small chain of doughnut shops in Seattle, in the U.S. state of Washington. The queer-owned business, which specializes in vegan doughnuts, was established by Christopher Ballard and Sean Willis. Dough Joy initially operated from a food truck in the Ballard neighborhood, and later expanded to brick and mortar shops on Capitol Hill and in the West Seattle neighborhood. In 2024, Dough Joy announced plans to open a third shop in Ballard. The business has garnered a positive reception.
